Hunger breeds discontentment,food to safety first.Food safety has become a hot topic in the social development of our country.The demand for food is not just for taste,but more about safety and health.In this context,with the exposure of "poisoned milk powder" and "fake milk powder",the dairy industry has been pushed to the tip of the food safety problem.How to better improve the quality and safety management level of dairy production enterprises has become the focus of attention.The HACCP system is a very effective measure.Through the scientific application of the HACCP system,can provide a strong guarantee for this article as a starting point for the dairy production enterprises to strengthen quality and safety management,take LH company as an example,to study the application of HACCP system in dairy production enterprises,the implementation of the HACCP system to provide reference experience for dairy enterprises more.First of all,this paper summarizes the concrete construction process of the HACCP system of LH company.By establishing good production practices,establishing health standard operation procedures and board resolutions,we will establish a HACCP system,build equipment management system,build product recall and whole process traceability system,and build personnel training system,so as to lay a foundation for the implementation of HACCP system.Then based on the steps of the formation of HACCP group,description standard,determine the intended use of the product and determine the production process and quality control process and measures to carry out hazard analysis,determine the critical control points,CCP to determine the critical limits,the formulation of CCP control system and formulate corrective measures,to build a HACCP system work record system,construction of HACCP system validation procedures set,finally establish the perfect HACCP plan,to strengthen safety monitoring for quality of infant formula.Second,this paper evaluates and analyzes the operation of HACCP system of LH company.In terms of product qualification rate,the first test qualified rate and reinspection qualified rate of LH company from 2011 to 2013 were 98.15% and 99.29% respectively.After the HACCP system was implemented by LH company in 2014,the first test qualification rate and the average of reinspection rate were 98.59% and 99.65% respectively from 2014 to 2017.The overall trend of the first pass rate and re qualification rate of the products has been improved.On consumer complaints,the average situation of consumer complaints from LH company infant milk powder from 2011 to 2013 was 8.17 /100 tons.After the HACCP system was implemented by LH company in 2014,the average situation of consumer complaints from LH company infant milk powder in 2014 to 2017 was 6.8 /100 tons,and the consumer complaint was obviously reduced by one level,and there was a trend.Yu Pingwen's trend.In customer satisfaction,the average customer satisfaction from 2011 to 2013 was 88.45%.After the implementation of the HACCP system,the customer satisfaction was 91.15% from 2014 to 2017,and the customer satisfaction was also improved to a certain extent.Third,this paper analyzes the operation reports of HACCP system of LH company,summarizes the effectiveness of the application of HACCP system,enables the company to achieve the goal of total quality management,and gets the trust and recognition of the market.However,there are still problems in retraining,system implementation and internal communication.Accordingly,this paper gives the targeted countermeasures to solve the above problems.First,strengthen the propaganda and training of the HACCP system;two,implement the HACCP document management system;the three is to strengthen the company's internal communication.For the LH company to better promote the application of the HACCP system provides good operational suggestions.
