Food is the essential element of human life and food safety issues are of great importance.With the continuous development of food science and technology and the continuous improvement of people's living standards,the public's understanding of food safety has shifted from the “quantity” guarantee to the “quality” pursuit.In recent years,food safety problems have occurred frequently at home and abroad,and the number of food-borne diseases has grown rapidly.As a result,the national public health authorities are taking stricter measures over the supervision of producers and sellers of food products.However,as a terminal of the food supply chain,consumers also have important responsibilities that cannot be ignored in food safety issues.Consumers as an important part of the economic body of the food market.Thus their own awareness of food safety and safe operating practices should be the focus of China's food safety work.This study took consumer food safety knowledge and behavior as the research object.Through the analyzing and summarizing of predecessors' research,a set of measurement scales for measuring consumer food safety knowledge and operation behavior was designed to examine the difference between consumer food safety knowledge and actual operation process.This study is divided into five chapters:The first chapter mainly introduces the background of the topic,the significance of researching consumer food safety self-protection,the domestic and foreign research results of consumer food safety self-protection,the research methods,as well as the purpose and content of the research.The second chapter is the concept definition and theoretical basis.After theoretically explaining the concept of food safety and self-protection behavior and reviewing past researches,it defines the concept and scope of consumer food safety self-protection behavior.this chapter also focuses on the theoretical basis for scale development.The third chapter of the scale development research mainly introduces the detailed steps for the development of the scale,and comprehensively studies the related fields of food safety,public health,psychology,etc.,and introduces the scientific methods and steps for establishing the scale in a general sense,and the reliability and validity required by the scale.The fourth chapter of the scale development process is the core of this study.This chapter explains the process of establishing the Consumer Food Safety Self-protection Knowledge and Behavior Scale in detail,including the establishment of the item library,the screening and modification of the items,the status of the four questionnaires,and the specific steps of the scale design.This establishes a consumer food safety self-protection behavior knowledge and behavior scale,and the reliability and validity of the scale,including content validity,internal consistency,item discrimination,discriminant validity,retesting Reliability was measured.Among them,the internal consistency of previous surveys of the scale was 0.750,0.671,and 0.587;the average degree of difficulty of the scale was 0.47,and the average degree of differentiation was 0.30;using a scale to distinguish between professional and non-professional groups,a progressive significance index is 0.029;The mean value of the Pearson correlation coefficient for the test retest reliability is 0.994.The fifth chapter conducts the research conclusions and prospects,summarizes the main conclusions of the study,points out the deficiencies in the research process,and expresses the author's views on the direction and focus of future research.
