With the international development of Chinese food,more and more scholars at home and abroad have begun to pay attention to the study of the development of Chinese food overseas,and overseas customers have more and more knowledge and understanding of Chinese food.In recent years,the development of Chinese food in the United States has made certain achievements,is a typical country of overseas Chinese food development,but considering the development process of Chinese food in the United States,the international process of Chinese food still needs more attention and support from governments,industry associations,enterprises and experts and scholars at home and abroad.In order to promote Chinese food to go out and meet the increasing consumption of Chinese food,it is very important to study the development of Chinese food in the United States.The overseas development of Chinese food is in the stage of promotion.There are few academic researches about the overseas development of Chinese food and the going out of Chinese food.It is of great significance to carry out the research on the Countermeasures of Chinese food based on the development of Chinese food.In this paper,literature research,questionnaire survey,interview,qualitative and quantitative analysis are applied to study the current situation of the development of Chinese food in the United States.Based on the three historical stages of Chinese going abroad,the development history of Chinese food in Unite stated and The present situation of development of Chinese food overseas,On the basis of Maslow's hierarchy of needs theory,customer delivered value theory,Hofstede's cultural dimension theory and sustainable development theory,we first collated,analyzed and summarized the academic research status and achievements of domestic and foreign scholars in the field of Chinese food overseas development.In the analysis of Chinese food and the connotation of Chinese food culture,the concept of management and management model is preliminary defined.On the basis of this,the overseas development of Chinese food is introduced from the main subject,the object of operation,the mode of operation and the scale of operation.Adopting the method of Likert five scale and SPSS21.0 software,through the extensive collection of information,in-depth interviews and a lot of questionnaires in a variety of ways,an effective analysis of Chinese food perception quality was carried out from six aspects for Chinese food consumers in the United States:perception of dishes quality,perception of service quality,perception of health quality,perception of dining environment,perception of cultural characteristics and perception of price and publicity.Through the analysis of statistical data,this paper analyzes the satisfaction and demand of Chinese food consumers in the United States to the Chinese food market and identifies the direction of Chinese food in the process of going out.Although there are some historical development of Chinese food in the United States,but there are many problems in the actual process of development.According to the development status of Chinese food in the United States can know in the process of going out of Chinese food business independent operation is the normal operation,extensive management reduces the quality of Chinese food,policy and economic support is limited,the functions of the related industry organizations are limited,the work of the authoritative Chinese food appraisal institution needs to be strengthened,the brand image construction of Chinese food is weak,lack of qualified personnel,cultural identity is low.Aiming at the existing problems at the present stage,the development ideas and suggestions are put forward from three perspectives of government,industry associations and Chinese catering enterprises,which provide a basis for the theoretical research and practice of Chinese food going out.
