88 COMPANY is a professional fruit juice beverage producer,and mixed Piteguo fruit juice beverage is the main product.Therefore,Quality and Food Safety of fruit juice beverage is an important factor to the company in future development,and optimization of Food Safely Management is vitally important to the company.This paper is taken the juice beverage development situation both domestic and abroad as the research background,and taken the HACCP(Hazard Analysis and Critical Control Point)as the center,and taken the Food Safety and Customer Satisfaction as the starting point,combined with the Quality Management System,to find out the corresponding management method of food processing.Through method of field investigation,scene evidence obtaining,and informal discussion,this paper is included overall comprehension of the entire process of the company production and operation.First of all,take the hazard analysis of the entire process of the company production,and identify the hazards existing in the aspects of Food Safety,and classify the hazards,and research and draw up the HACCP Plan aiming at critical hazards.Taking control of the critical hazards through the HACCP Plan,and taking control of the general hazards through GMP(Good Manufacturing Practice)and SSOP(Sanitary Standard Operating Procedures).Taking overall process control through workshop facilities,workshop layout,water safety,chemicals control,personnel sanitation,hand washing and sterilizing,rat-proof and fly-proof etc.In the procedure of hazard analysis of Food Safety and drawing up control measures,according to the PDCA theory of Deming cycle,taken each process into account,from planning,implementation,examination,improving,and forming the closed loop management.Meanwhile,combined with the Eight Quality Management Principles of the Quality Management System and related requirements,so as to find out the best scheme of improving.Finally,feasibility analyze the optimization scheme of Food Safety Management,put forward concrete measures and proposals,and evaluate the effect of the scheme.
