Objective:To introduce the food literacy evaluation questionnaire(Australia),combine Chinese cultural background to localize,and test its reliability and validity.Method:1.In order to form an initial questionnaire for evaluating food literacy,we reviewed the literaturesabout food literacy evaluation scales or questionnaires,selected the Food Literacy Questionnaire developed and verified by Andrea Begley(Australia)in 201 8.After obtaining the authorization of the original questionnaire developer,we used the two-person translation-back translation method for translation and back translation.Thentwo rounds of Delphi expert consultations and preliminary surveys were performed.2.The convenient sampling method was applied in this study.The general information questionnaire and the initial questionnaire for evaluating food literacy were used to survey total 550 participants(275 from Guangling urban area and 275 from Yizheng Yuetang Township)by household interviews.3.Epidata 5.0 software was used to establish the data.SPSS 20.0 and AMOS 24.0 were used to analyze the data statistically.The item analysis method,coefficient of variation method,critical ratio method,and correlation coefficient method were used to analyze the questionnaire items.Homogeneous reliability,half-belief and retest reliability of the questionnairewere used to test the internal consistency and external stability reliability of the questionnaire.Through exploratory factor analysis and confirmatory factor analysis,the structural validity and differential validity of the questionnaire were evaluated,and the surface validity and content validity of the questionnaire were analyzed.Results:1 After the systematically translation,back-translation,semantic analyzsis of the introduced food literacy questionnaire,and consultating with total 9 experts(two rounds),pre-investigating 20 participants to form an initial questionnaire for evaluating food literacy,which's items were increased from 14 to 16.It included three aspects,namely(1)planning and management of foods,(2)selection of foods,and(3)attitude of making foods,respectively.The questionnaire was easy to understand andits content was consistent with the residents' food literacy under the cultural background of China.2.Item analysis:(1)the selection rate of each option of each item the Food Literacy Questionnaire(Chinese version)is less than 80%,the CV values of all of 16 items were greater than 0.15.The differences between the scores of all items in the high and low groups were statistically significant(P<0.01)and their T values were>3.00.The Pearson correlation coefficient between the scores of items and the total score of the Food Literacy Questionnaire(Chinese version)were between 0.318 and 0.762.(2)After the item "thawing meat at room temperature" was eliminated,the explanation variation rate of questionnaire containing total 15 items reached 80.900%and the factor load oefficient of the item is 0.815?0.953.3.The reliability of the Food Literacy Questionnaire(Chinese version):(1)The Cronbach's a coefficient of homogeneity test:the Cronbach's ? coefficient of Food Literacy Questionnaire(Chinese version)was 0.869,the Cronbach's ? coefficients of three dimensions named(a)Planning and management of foods(dimension 1),(b)Selection of foods(dimension 2),and(c)Attitude of making foods(dimension 3)were 0.955,0.925 and 0.933,respectively;(2)Half-fold coefficient:the half-fold coefficient of total questionnaire was 0.917,the half-fold coefficient of dimension 1,2 and 3 were 0.806 to 0.962,respectively;(3)Retest reliability coefficient:the retest reliability coefficient of total questionnaire was 0.948,and the retest reliability coefficients of the dimension 1,2 and 3 were 0.941 to 0.950,respectively.4.The validity of the Food Literacy Questionnaire(Chinese version):(1)Surface validity:according to the theory and method of scale domestication,combined with the knowledge of the expert team,the questionnaire showed the good surface validity;(2)Content validity:the content validity index(CVI)of the total questionnaire is 0.945,and the CVI values of each item were 0.560?1.000;(3)Structural validity:a total of 3 dimensions were extracted from exploratory factor analysis,and the cumulative variation rate was up to 80.900%,much higher than 70%;KMO value was 0.889;correlation coefficients between each item and attribution factor were 0.829?0.955;correlation coefficients between each item and other factors were 0.004?0.227;the correlation coefficients between each factor were 0.046?0.188;the correlation coefficients between each factor and the total questionnaire were 0.419?0.788.(4)Discriminant validity:confirmatory factor analysis showed that the chi-square degree of freedom value is 4.136,which meets the standard(?5),and that the values of GFI,CFI,and IFI were all greater than 0.9,RMSEA was 0.079(<0.08),reaching the deviation standard value,which indicated that the model fitting quality was good.At the same time,AVE,the convergence validity indexes,of all dimensions in this study were greater than 0.5,indicating that the convergence validity of all dimensions were higher.Conclusion:The Food Literacy Questionnaire(Australia)was successfully localized and verified,and the Food Literacy Questionnaire(Chinese version)was formed.It contains 3 dimensions 15 items,namely dimension 1(planning and management,7 items),dimension 2(selection,3 items),dimension 3(production attitude,5 items).The Food Literacy Questionnaire(Chinese version)can be used as a reliable tool for evaluating the level of food literacy of residents in the cultural context of China.
