The report of the Nineteenth National Congress of the Communist Party of China proposed the implementation of a healthy China strategy,starting from maintaining the health of the whole people and achieving long-term development,proposing the strategic goals of promoting the construction of a healthy China,and issuing the "Outline of " Healthy China 2030 " Plan," Attach great importance to health.As a necessity of daily life,edible oil not only improves the flavor and taste of food,but also is an important source of essential fatty acids and vitamin E.However,due to excessive intake of oil,it has caused a series of health problems such as chronic diseases in recent years,and lack of nutrition knowledge Undoubtedly important influencing factors with unhealthy eating behavior.Based on this,this study took resident residents in three cities of Beijing,Shanghai and Zhengzhou as the research object,surveyed 645 residents,in order to understand the edible oil perception,attitude,behavior and influencing factors of urban residents and their consumer behavior.The study found that:(1)The total awareness rate of residents' knowledge about edible oil is 50.9%,and the awareness rate of professional knowledge such as recommended intake,fatty acids,trans fatty acids,and diet pagoda is much lower than the common sense of daily life such as storage methods and cold cooking oil.The awareness rate of daily recommended intake of edible oil was only 25.1%.The main factors that affect cognition are: education level,family size,whether to cook,whether to buy,whether to have a learning experience,and whether to have diabetes,etc.;(2)The total positive attitude of residents to cooking oil is 73.1%.The positive attitude holding rate of "reducing cooking oil" and "rotating eating oil" is low,and there are large cognitive misunderstandings and doubts.The main factors affecting attitudes are: location,gender,"three high" prevalence,nutritional awareness,frequency of eating out and occupation,etc.(3)The consumption frequency of residents' fried food is mainly 1-3 times per week(51.5%).Nearly 80% of residents have not learned the knowledge of edible oil.When buying edible oil,they will pay attention to nutrition labels and frequently change the edible oil varieties.The residents are over 70%.The main factors that affect behavior are: age,attitude,gender,income and education level.(4)Comprehensive evaluation,urban residents have low awareness of edible oil,good attitude,and need to improve their behavior.The overall average score of KAP is 76.88 points(percentage scale).Among them,women are higher than men,and the higher the age,the higher the score.High,among the permanent residents,the urban household registration residents are higher than the rural household registration residents,and the married or married history residents score higher than the unmarried residents.(5)The influencing factors of residents' purchase of edible oils in order of importance are nutritional value,brand,raw materials,price,eating habits,production process,taste,packaging and family preferences.The household edible oil varieties are peanut oil,soybean oil,rapeseed oil,blending oil,sunflower oil,olive oil,tea seed oil,linseed oil and other edible oils in order of edible frequency.(6)The frequency of residents' scientific knowledge information acquisition media is Internet,TV,books,radio and newspapers from high to low.Over 80% of residents said that they usually use the Internet to obtain scientific knowledge information.Most residents look forward to obtaining edible oil knowledge from the Internet in the future,and residents have the strongest willingness to understand the nutritional value of various edible oils(68.5%).Based on the above research,the following countermeasures and suggestions are proposed: one is to enrich the content of popular science education and further enhance the pertinence of the mission;the second is to innovate the form of popular science education and further broaden the channels of mission;the third is to strengthen the research on the consumer demand of the audience and further enhance the effect of mission;the fourth is sufficient Give full play to the functions and functions of market players in science popularization and education,improve and innovate the education model,improve the nutritional awareness of residents,form scientific dietary behaviors,and further improve the food nutrition and health literacy of our residents.
