| Edible agricultural products refer to edible plant,animal husbandry,fishery products and their primary processing products.Edible agricultural products centralized trading market refers to the market formed by centralized trading of edible agricultural products in a certain place,at a certain time and in accordance with certain rules.In order to fully implement the important instructions for food safety work from chairman Xi,response the deployment from provincial party committee,municipal party committee about improving the security of concentrated edible agricultural products trading market and solve the problems that people most concerned,the most realistic and most direct,meeting the people's pursuit of quality of life and longing for a happy life.It is necessary to strengthen the food safety system and infrastructure construction of Yangzhou urban edible agricultural products centralized trading market to ensure food quality and safety.In this study,42 centralized agricultural products trading markets in Yangzhou were investigated.Meanwhile,KAP questionnaire survey on food safety was conducted among the sellers.Secondly,sampling inspection of high-risk edible agricultural products was carried out in 42 agricultural products centralized trading markets in Yangzhou.Finally,the survey data,KAP questionnaire data and high-risk sampling data were analyzed statistically to find out the risks in the centralized trading market of edible agricultural products in Yangzhou and put forward risk prevention measures.It provides a strong basis for the supervisors,and provides the decision-making reference for the relevant government departments.By observing,inquiring and recording the food sales environment,market infrastructure,food safety management system,food marketing and sales behavior,the implementation of the main responsibility of the market administrator and the seller,and the construction and operation of the food fast detection room in the centralized agricultural products trading market in Yangzhou.Results:(1)most of the trading market in Yangzhou have upgraded and improve the hardware conditions.Some markets have rudimentary infrastructure;Some markets are operating in a "half-empty shell".(2)there is a big difference in fulfillment of the main responsibility among different trading market operators and sellers;The main responsibility consciousness of some administrators is weak.(3)part of the food fast detection rooms detection have too few detection items and low detection effect.A questionnaire survey on food safety knowledge,sales behavior and attitude of sellers in Yangzhou agricultural products market was conducted.Statistical analysis of KAP questionnaire results:(1)the sellers' knowledge of food safety is generally not high,most of who know about 60%questions;The awareness rates of questions 1,3 and 4 were 39.42%,37.22%and 31.23%,respectively,which suggests the score on knowledge category is not very good.Most of them have a positive attitude towards the food safety,with an average positive rate of 87.82%.Food safety behavior of sellers is generally good,86.54%of the sellers have a good attitude towards food safety;About 20 percent of the sellers are slightly negative on the aspects of"regular cleaning and disinfection of the workplace." and "when purchasing agricultural products,will check the supplier's license and food factory inspection or other qualified certificate".The fast detection kit of sulfur dioxide was evaluated.The prepared blind samples were tested by GB 5009.34-2016 "determination of sulfur dioxide in food of national standard for food safety" and the fast detection kit of sulfur dioxide.The results were compared and analyzed.The comparison between the sulfur dioxide rapid detection kit and the national standard detection method showed that the sensitivity was 96.36%,greater than 95%,and the specificity was 100%,meeting the requirements of?85%.False positive rate ?5%;False negative rate was 0.All the indexes meet the requirements of the technical specification for fast detection method evaluation of food.The positive confirmation rate of the reference method was within the 95%confidence interval x2<3.84(df=1,?=0.05),indicating that there was no significant difference between the method of this fast detection kit for sulfur dioxide and that of the reference method within the 95%confidence interval.The comparison between the Nitrite rapid detection kit and the national standard detection method showed that the sensitivity was 95.19%,greater than 95%,and the specificity was 100%,meeting the requirements of?85%.False positive rate ?5%;False negative rate was 0.All the indexes meet the requirements of the technical specification for fast detection method evaluation of food.The positive confirmation rate of the reference method was within the 95%confidence interval x2<3.84(df=1,?=0.05),indicating that there was no significant difference between the method of this fast detection kit for sulfur dioxide and that of the reference method within the 95%confidence interval.A total of 1528 batches were inspected in 42 centralized agricultural products trading markets in Yangzhou,and the qualified rate was 75.02%.Analysis of sampling inspection results of edible agricultural products:(1)among the six high-risk items of sampling inspection,the lowest formaldehyde qualification rate is 50.49%;The following is the qualified rate of sulfur dioxide 59.38%.Qualified rate from small to large arrangement:formaldehyde<sulfur dioxide<meat products pigment<borax<nitrite<condole(2)white block.In the agricultural products centralized trading market of different types of business,the qualified rate of the large-scale market is 78.89%higher than that of the small-scale market 71.03%.(3)According to quarterly statistics:the lowest qualified rate is the 3rd quarter with 69.27%,the highest is the 2nd quarter with 77.63%.The qulified rate for the first and third quarters is around 75%. |
