This project is supported by the scientific research for the Sichuan Provincial Commission of economy and information technology——"Chinese Hanyuan prickly ash deep processing of key generic technologies and industrialization(Project SEQ ID no:2014PT048)".Based on the traditional evaluation methods,this study was designed to improving the existing standard of Chinese prickly ash by combining modern scientific and technological methods,and furthermore relevant quality evaluation system was established to realize its higher quality and price.The present study,based on the traditional sensory experience of human beings,in order to achieve objective expression the traditional experience,the color quality of Chinese prickly ash was quantified using modern instruments.The numbing-taste components of Chinese prickly ash were isolated and identified,including hydroxy-a-sanshool,hydroxy-?-sanshool and hydroxy-y-sanshool.Furthermore,the content of total alkylamides was determined and the quantitative analysis of multi-components by single-markers for the determination of numbing-taste compounds was also established.Meanwhile,the content of each physical and chemical index component were determined,and the contents of limonene and linalool in aroma components of Chinese prickly ash were studied.In addition,heavy metals from different production areas in Chinese prickly ash were systematically determined by using inductively coupled plasma-mass spectrometry and conducting a safety assessment.In our previous study,a complete method including single evaluation and overall evaluation was adopted by combining appearance evaluation with the intrinsic evaluation.Subsequently,the requirement of limit was established for the quality evaluation of major index,the grading standard of Chinese prickly ash was improved and an effective and complete quality evaluation method was established.Finally,this research formed a suitable draft of Chinese prickly ash quality grade evaluation criteria.In this experiment,a large number of Chinese prickly ash in different grades quality evaluation data were collected based on the one-sidedness of traditional Chinese prickly ash grading method.Considered the color of Chinese prickly ash,the content of inner flavor substance(total amide alkylamides,volatile oil)and impurity content as the breakthrough points,a fast,non-destructive and effective quality evaluation method of Chinese prickly ash was established by comprehensive correlation analysis between external color and its internal composition index with combination of artificial neural network technology.
