Environmental factors not only affect the normal growth and development of crops,but also sometimes change the nutritional value(quality)of crops,such as water stress.Oat(Avena Sativa L.),belonging to the genus Avena of the Gramineae family,is a kind of grain and grass crop that can withstand cold and drought.Because of its ability to prevent and slow down the "three high" levels of ?-glucan,oat is considered to be one of the ten most beneficial crops to human health.And how to improve the content of?-glucan in oat has become one of the hot topics in recent years.Previous studies have reported that the content of oat ?-glucan is not only significant difference between the varieties,and severely affected by the environmental factors,such as rainfall of the year.However,it's rarely reported that the relationship between the degree of water stress and oat?-glucan content change pattern.In this paper,the contents of ?-glucan(including total ?-glucan and water-soluble ?-glucan)in 60 oat varieties(including 39 naked oat varieties and 21 oat varieties)collected were quantitatively determined by the improved cellulase method.And then,we selected three oat varieties with similar growth periods(Ba You-1,Bai Yan-11 and Ning You-1),carried out water stress treatment during the filling stage(different levels of rain covered design: no covered,half covered and fully covered)and quantified the plant water degree by relative water content of flag leaf,determination of ?-glucan content after the seeds were harvested after ripening,to discuss the water stress on the influence of oat ?-glucan mode.The research conclusions are as follows:1)The average value of the total ?-glucan content of 39 naked oats varieties is 6.0951%,the average value of the water-soluble ?-glucan content is 4.0954%,the content of water-soluble ?-glucan and the total ?-glucan The content was significantly positively correlated(r = 0.583,p <0.01).2)The average value of the total ?-glucan content of 21 oats varieties is5.9874%,the average value of the water-soluble ?-glucan content is 3.8161%,the content of water-soluble ?-glucan and the total ?-glucan The content was significantly positively correlated(r = 0.434,p <0.01).3)An independent sample T test was performed on the ?-glucan content of naked oats and oats,and the results showed that there was no significant difference in the total ?-glucan content between the two(p = 0.361> 0.05),water-soluble ?-glucan There was no significant difference in content(p =0.054> 0.05).4)Correlation analysis of water-soluble ?-glucan content and total?-glucan content in 60 varieties of oats showed that water-soluble ?-glucan content and total ?-glucan content were significantly positively correlated(r= 0.515,p <0.01).5)The range of ?-glucan content varies greatly between different varieties of oats.And the range of water-soluble ?-glucan content is significantly higher than that of total ?-glucan;6)The three oat varieties of drought resistance sorting is: Ba You-1>Bai Yan-11 ? Ning You-1.7)The influence of water stress on the content of oat ?-glucan is different with varieties at the filling stage.Under a certain degree of water stress,the ?-glucan content of Ba You-1 has decreased,Bai Yan-11 and Ning You-1 ?-glucan content of has increased.8)Under the water stress treatment,the content of water-soluble?-glucan changes more than the total content of ?-glucan,indicating that water stress has a greater effect on the content of water-soluble ?-glucan.In summary,there is no significant difference between the ?-glucan content of naked oats and barley oats.There is a significant positive correlation between the content of water-soluble ?-glucan and total ?-glucan,and environmental factor(water factor)has a greater effect on the content of water-soluble ?-glucan.The ?-glucan content of drought-tolerant varieties decreased under certain water stress,and drought-sensitive varieties have increased ?-glucan content under certain water stress.
