| China is one of the origins of Perilla frutescens and has extremely rich germplasm resources of Perilla frutescens.However,the research on Perilla frutescens in China is still in the initial stage,lacking in in in-depth and systematic research,and there are few reports on the research on perilla frutescens seed bud oil at home and abroad.The development of Perilla frutescens as a new edible oil raw material can not only highlight its health and nutrition characteristics,but also meet people’s current consumption needs.This paper not only fills the gaps in the research on Perilla frutescens seeds in China,but also has important practical significance for the development of Perilla frutescens seed resources in China.In this paper,perilla seeds from seven production areas in China were used as experimental materials to germinate in an incubator,and their nutrient content and enzyme activity were determined and analyzed after 7 days of germination.The germinated seeds were dried in an oven at 60℃.After grinding,the oil was extracted by solvent condensation reflux method.The antioxidant,physical and chemical indexes and fatty acid composition of perilla seed bud oil from each production area were analyzed.The research results are as follows:1.Seed germination of Perilla frutescens from Heilongjiang,Henan,Gansu,Anhui,Guangdong,Yunnan and Hebei was taken as experimental materials,and the protein content,fatty acid content,soluble starch and soluble sugar content were studied and analyzed.The results showed that there were certain differences in nutrient content between different production areas,with the highest fatty acid content of 1.6 mL/g in Hebei production area.Heilongjiang is the highest,reaching 40.13 mg/g;The highest starch content was found in Gansu,at 19.13 mg/g.The highest protein content in Henan was 2.81 mg/g.2.The activities of amylase(α-amylase and α+β-amylase),lipase and protease of perilla seed bud in Henan province are higher than those in other regions,31.37 mg/(gmin)and 24.13 mg/(gmin),17u/g and 180.96u/g respectively,with significant differences,followed by Heilongjiang province,with no significant differences in glucoamylase activities among the seven regions.3.In the anti-oxidation experiment,VC was used as positive control,perilla seed bud oil was not particularly sensitive to DPPH and ABTS scavenging ability,perilla seed bud oil was sensitive to hydroxyl radical scavenging ability,IC50 values of various production areas were calculated,IC50 values of DPPH and ABTS radical scavenging effect in Heilongjiang production area were 7.50 mg/mL and 13.23 mg/mL respectively,while Henan production area with better hydroxyl radical scavenging ability was Henan,with IC50 value of 0.25mg/mL.4.The fatty acid composition of perilla seed bud oil from seven production areas was analyzed by GC-MS method.The results showed that the linolenic acid content of perilla seed bud oil from Heilongjiang production area was the highest,84.83%,the linolenic acid content from Yunnan production area was 76%,and the content from Hebei was the lowest,72.88%.Perilla seed bud oil from different producing areas contains 9-hexadecenoic acid methyl ester,palm methyl ester,linolenic acid,ethyl linolenate,linoleic acid methyl ester,saturated fatty acid content is mainly palmitic acid methyl ester,unsaturated fatty acid content is mainly linolenic acid content,and unsaturated fatty acid content is significantly higher than saturated fatty acid content,unsaturated fatty acid content accounts for 85%or more of the total fatty acid content. |
