Honey is a kind of natural sweetness substance which is stored in the spleen of the nest after fully brewing the nectar or nectar of the collected plants,or the excreta of insects and their own secretions.It has been found that there are about 320 different kinds of honey,which come from different plant sources,and the chemical composition of honey is complex;honey is a kind of nutrient substance with the same source of medicine and food,which has a high nutritional value,contains a variety of physiological active substances,and has the functions of regulating human physiological function,strengthening physique,improving immunity,enhancing memory,anti fatigue,anti-aging and beauty.However,at present,honey processing and quality monitoring are not perfect.This paper analyzes the main components of honey through various analysis methods,aiming to explore the differences of honey components between different pollen honey,and provide theoretical basis for further processing of honey,reasonable development of its health value,traceability of honey and honey quality monitoring The following are:According to the research content and the honey species in Shandong Province,27 honey samples were selected,including 9 jujube honey,9 locust honey and 9 Jingtiao honey.1.By detecting the content of pH,conductivity,water,color value,total protein,total flavone,ester acid,free acid,total acid,fructose,glucose,sucrose,maltose,lactose,etc.in honey,comparing the same and different indexes among different pollen honey,the conductivity,color value(L),pH value in honey,lactone acid,free acid,total acid,total protein,total flavone,fructose,etc Glucose,fructose / glucose and other indicators are different among the three kinds of honey,which can be used as reference indicators for the identification of the three kinds of honey.2.The contents of 12 metal elements Cr,Cd,Pb,Fe,Mn,Cu,Zn,Sr,Na,Mg,K and Ca in the samples were determined and analyzed by inductively coupled plasma mass spectrometry.The results showed that the contents of Pb and Cd in the honey were relatively low,while the contents of Cu in the honey were not significantly different.The contents of nine metal elements(E,Mn,Zn,Sr,Na,Mg,K,Ca)in different pollen nectar have obvious differences.Through cluster analysis and establishment of judgment model,the content indexes of the above nine elements in honey can be used as reference indexes to identify three kinds of honey;3.SDS-PAGE electrophoresis was used to analyze the protein components in honey,and it was found that there was no significant difference between the same kind of pollen honey and different kinds of pollen honey;ion chromatography was used to analyze the amino acids in honey,and it was found that cysteine and methionine were not detected in honey,and 16 amino acids such as aspartic acid,serine and glutamic acid were not detected in different kinds of honey The results of cluster analysis and discriminant model analysis showed that 16 amino acids such as aspartic acid,serine and glutamic acid in honey could identify three kinds of honey.4.Using headspace solid-phase microextraction to extract the volatile matter from honey and optimize the extraction conditions,using gas chromatography-mass spectrometry to analyze and identify the extracted volatile matter,and comparing with the volatile components of flowers corresponding to different honey,we can find that there are certain differences and special properties of the volatile compounds in honey,which can be used as the reference index to identify three kinds of honey?...
