Toona sinensis was used as material,this paper explores effects of sodium selenite on the sprouts and germination rate of Toona sinensis in the process of soaking and ermination under different conditions,the change rule of sprouts of Toona sinensis on elenium-enrichment,as well as the influence of selenium on the quality of Toona sinensis sprouts.It explores condition which is conducive to the growth of Se-enriched sprouts,and studies selenium's enrichment production craft on the sprouts Toona sinensis.The experimental results are as the following:1.In order to improve the low germination rate in the production of Toona sinensis,experiments conduct vernalization on the seeds of Chinese Toon Sprout with Na2SeO3 of different concentrations.The results show that the most suitable conditions for the roduction of Se-enriched Chinese toon sprouts are Na2SeO3?concentration of 6mg/L?,the suitable soaking temperature of 28?C,soaking time for 8h.Compared with the control roup,Se-enriched sprout germination rate under this condition reaches 76%,and the germination rate increased by 20%.2.Soaking,spraying,soaking+spraying are used to conduct Se-enriched treatment in the production of Toona sinensis,The results show that the soaking methods can ignificantly improve the selenium content in Toona sinensis buds and transformation of organic selenium,and has less impact on the environment;total selenium content and organic selenium of spraying,and soaking+spraying a litter higher than the contents of them in the soaking.But it can cause soil pollution easily,and has more expensive roduction cost,which are consistent with the research results of Zhang Hong[1],Makda[2]and other research results.The method that soaking with sodium selenite of definite oncentration to improve the total selenium content and organic content in Chinese toon sprouts proves to be effective.3.In the process of Se-enriched germination of Toona sinensis,the selenium content of Chinese toon sprouts will appear increasing trend with the increasing concentration of selenium during the processing,while the content of organic selenium in Chinese toon buds will also increase gradually;the transformation rate of organic selenium being ifferent in different concentrations and different ways of applying selenium,soaking is more conducive to the transformation of organic selenium;the increase of selenium ontent in sprouts can satisfy human need for selenium and complies with the scope of food safety.The plants are served as a carrier,selenium-contained plant nutrients,organic elenium and inorganic selenium receive from outside ways like sodium selenite are used in the soaking,germination or production process to improve the content of selenium in plants.It is beneficial to the human body and it can meet people's demand for selenium in areas lack of selenium.4.In the process of germination and growth of Toona sinensis,under conditions of the use of Na2SeO3 solution of different concentrations?control group,2mg/L,4mg/L,6mg/L,8mg/L,10mg/L?,the use of Na2SeO3 solution of 4-6mg/L,the quality of elenium-enriched Chinese toon sprouts quality will be influenced by different processing modes.The protein content in Toona sinensis,the content of soluble sugar,content of itamin C can reach the highest;the higher the Na2SeO3 concentration,the lower of the content of cellulose and nitrate,the taste and quality of Toona sinensis will also get mproved.
