This experiment was conducted to investigate of znic methionine supplement on production performance,flesh quality,immune function,anti-oxidant index,intestinal flora of Paramisgurnus dabryanus.A total of 450 fish with an average weight of(5.21 ±0.15)g were randomly divided in 6 groups,Omg/kg,20mg/kg,40mg/kg,80mg/kg,120mg/kg and 160mg/kg of znic methionine were added into the diets of 6 groups,respectively.The water temperature was 21?26?,after the feeding trial(50d),record the survival rate(SR),weight gain rate(WGR),condition factor(CF),specific growth rate(SGR),hepato-pancreasindex(HIS),spleen index;crude protein,crude fat,ash content,moisture content,rate of water loss,pH,shear force;alkaline phosphatase(AKP),lysozyme(LZM),total antioxidant capacity(T-AOC),superoxide dismutasw(SOD),catalase(CAT),glutathion peroxidase(GSH-PX),malondialdehyde(MDA)in plasma and hepato-pancreas.intestinal flora indicators,microstructure of muscle and intestinal.The results show that:(1)The appropriate level of zinc in the diet can improve the production performance and flesh quality of Paramisgurnus.dabryamus.WGR,SGR and CF in each treatment group were irmproved(P<0.05,P<0.05,P=0.08).The significant positive correlation existed between WGR ang fold heights of intestinal,fold density of intestinal and intestinal wall thickness(r1=+0.983,P<0.01;r2=+0.959,P<0.01;r3=+0.890,P<0.05).Crude fat significantly with increasing level of zinc up to a point,and thereafter increased(P<0.05).pH,crude protein,ash content and density of muscle fiber significantly with increased level of zinc up to increased(P<0.05).diameter of muscle fiber,muscle fibers gap,shear force and cooking loss wear significantly reduced.The significant positive correlation existed between shear force and diameter of muscle fiber,muscle fibers gap,cooking loss(r1=+0.973,P<0.01;r2=+0.824,P<0.05;r3=+0.984,P<0.01).(2)HIS,spleen index wear significantly improved by dietary zinc supplementation(P<0.05).The concentration of plasma,hepato-pancreas zinc and activity of AKP,LZM,CAT and GSH-PX sighnificantly enhanced with dietary zinc level up(P<0.05).T-AOC,SOD wear great significantly improved(P<0.01).MDA was significantly reduced.The significant positive correlation existed between spleen index and LZM,GSH-PX and SOD(r,=+0.959,P<0.01;r,=+0.963,P<0.01;r3=+0.954,P<0.01).(3)The amount of Escherichia coli in each treatment group were great significant reduced(P<0.01).The amount of Lactobacillus and Bifidobacterium in each treatment group were significantly or great significant improved(P<0.05).(4)Zinc can improved the survival rate,reduced the morbidity after the poison attack trial.The activity of T-AOC,LZM in plasma wear significant improved(P<0.05).The amount of Escherichia coli in each treatment group were significant reduced(P<0.05).there was no significant with the amount of Escherichia coli and MDA in plasma(P>0.05).To sum up,appropriate levels of zinc can improve the WGR,SGR,CF,it means that zinc has a promoting effect for the growth of Paramisgurnus dabryanus;crude protein and ash content;reduced the crude fat,shear force,cooking loss,diameter of muscle fiber and muscle fibers gap;increase density of muscle fiber,improve the production performance and flesh quality,it means that zinc can improve the muscle quality of Paramisgurnus dabryanus.Zinc can improve the HIS,spleen index,it means that zinc can promote the development of immune organs.Zinc can improve the activity of AKP,LZM,CAT,GSH-PX,T-AOC,SOD in hepato-pancreas and plasma;reduced the MDA content;Zinc can promote immune function,anti-oxidant capacity,it means that zinc can improve the immune and antioxidant capacity of Paramisgurnus dabryanus.Appropriate levels of zinc can improve intestinal flora,regulate intestinal microecological balance,improve the intestinal immune system,enhance the disease resistant ability.The optimal dietary znic and znic methionine requirement for maxmum of Paramisgurnus dabryanus were determind to be 38.38mg/kg and 77.78 mg/kg diet.
