Yellow rice wine is one of the world's three oldest wines,and is the world's earliest grain wine.The history of yellow wine is also the history of Chinese wine.As a semi-sweet yellow wine representative with the characteristics of regions south of the Yangtse River,it has its own special skills.It is a natural environment for the development of yellow rice wine.The latter is located in Suzhou,and is deeply influenced by the drinking wind of Suzhou.In the Qing Dynasty,the Shazhouyouhuang brewing process was unique and exquisite,and the traditional production process was numerous,demanding and specific seasonality.Apart from that,it is the distiller's yeast that makes the Shazhouyouhuang from the many yellow wines.It is used as a saccharifying agent and a starter for rice wine.However,in the process of koji making,the Shazhouyouhuang does not use straw to cover,but use the grass from the mountain.The characteristic of thatch is that it is not easy to decompose and has a void,which is not peculiar to the distiller's yeast,and has a natural fragrance,which has an important effect on improving the quality of wine.Product's color is orange,clear and transparent,mellow and refreshing,nutrition is rich,so the Shazhouyouhuang was listed in Zhangjiagang city the first intangible cultural representative list,at the same time,the brewing technique of Shazhouyouhuang as Suzhou yellow rice wine brewing techniques of one of the non-material cultural heritage list in Jiangsu.The Shazhouyouhuang is not only good for nutrition and medicinal value,it has a unique history and cultural value,so it has important significance to the preservation of the protection of the Shazhouyouhuang.The protection and inheritance of the local government and inheritance units in the protection and inheritance of Shazhouyouhuang have been active.However,there are some problems in the process of protection and inheritance.The paper discusses these problems and puts forward some countermeasures and Suggestions.
