With the continuous progress of science and technology and the rapid development of economy in China,the food safety problem has been paid more and more attention by the country and people.The food safety problem in the society has brought serious harm to people.Unreasonable management standards,imperfect quality management system and lax implementation of national standards are the root causes of food safety problems.HACCP system is a complete food safety and quality management system,which can effectively control and eliminate food safety hazards in the food production process and prevent food safety problems.At the same time,HACCP system can standardize the quality and safety management of food enterprises,improve the hygiene awareness and work efficiency of production personnel,increase the production output of products,change the attitude of enterprises to potential safety hazards of food,and improve the standard of food safety management system.Through the combination of HACCP food safety and quality management system and the production of black tea beverage,this paper discusses the food safety hazards in the production of black tea beverage,and controls them,and sorts out a complete HACCP system of black tea beverage enterprises.In this paper,the relevant theories of HACCP system are used to standardize the raw material acceptance and sanitary status in the production of black tea beverage,analyze the potential hazards in the production of black tea beverage,determine the critical control points and CLS,and effectively monitor,rectify and record the deviation.At the same time,after the implementation of HACCP effect of black tea beverage comparison,it can be clearly found that the product failure rate,complaints rate are significantly reduced;The production efficiency of the workers is obviously improved,which speeds up the output of the black tea beverage production.At the same time,the product's sensory quality and opening torque have been recognized.Therefore,the application of HACCP system to the production of black tea beverage can not only effectively control food safety hazards and prevent unsafe food accidents,but also improve the management level of enterprises and enhance consumers' trust and recognition of black tea beverage enterprises.
