Using Black Soybean Seed Coat as material,the research on production technology of Black Soybean Seed Coat beverage was studied.Mainly based on respond surface methodology,the production of black Soybean Seed Coat beverage and the optimum procedure parameters were partly optimized and determined.In addition,the clarification,stability and free radical scavenging activity in vitro of beverage were researched.The results were as follows:1.Black skin polyphenol extracts in vitro of alpha amylase and alpha glycosidase enzymes have strong inhibition,extract solution concentration and inhibition show concentration-response relationship;When the inhibitor concentration of 0.25 mg/ml,0.5 mg/ml,1 mg/ml,2 mg/ml extracts of different grains have significant differences between the substrate inhibition,4 mg/ml,6 mg/ml,no significant difference;After purification the polyphenol content(78.3%)than before purification(39.5%)increased significantly,and its effect on enzyme inhibition is purified before significantly enhanced;Dynamics analysis results showed that black bean peel polyphenols extract of alpha amylase inhibitory effect of competitive inhibition,the alpha glycosidase enzymes were characterized by the type of competitive inhibition.2.Ingredients of Black Soybean Seed Coat beverage include:honey,green tea juice,white granulated sugar.Through the respond surface experiment,the optimum proportion of each ingredient of Black Soybean Seed Coat beverage was:Black Soybean Seed exact 21.7%,tea juice 10%,honey 3.3%,white granulated sugar 0.67%.In this formula,the sensory score of the beverage made from Black Soybean Seed Coat was the highest,which was 9.5 point.3.Research shown that static clarification,heating flocculation clarification,freezing clarification,xanthan gum clarification were unaffected through testing the clarification about Black Soybean Seed Coat beverage.Centrifugal clarification had certain effect on the beverage but not significant,it's euphotic index was 83.3%.Based on the respond surface methodology,the conditions of optimum mixing proportion of mixed clarifier,initial pH,and temperature were 0.4:4.8,4.5,55min.Under this condition,the euphotic index could reached 92.9%.4.Through the black beans bark extract determination of tea polyphenols in drinks,get black leather in drinks tea polyphenol content is 9.9938.mg/L.Through the experiment of black beans bark extract drinks scavenging free radicals,black beans bark extract drinks clearance rate of 46.733%..
