There is always a saying that "one a crab is served and other flavors are not worth mentioning" in China.Crabs are popular among coastal residents because of its delicious meat,rich nutrition,and unique flavor.Swimming crab,Portunus trituberculatus,is the crab that people prefer to choose in their daily lives.However,the inland dweller can not taste the crab frequently due to the influence of season and high price.Besides that,the taste of crab will greatly be reduced by the changing in flavor substances,resulting from the far-away origin and long-time transportation.At present,the price of swimming crab from different producing areas vary.The consumers have paid more attention to the discripency of nutrition and flavor of aquatic products from diverse areas and the origin identification of products with regional characteristics.Research on swimming crabs’ nutritional components are mainly concentrated in the conventional nutrients,such as amino acid,and fatty acid.Most of them are conducted with the national or industrial standards studying the impact of food,environment,and gender on the nutritional compounds of swimming crab.But reports about the differences in nutrient and flavor between the wild and cultured crabs are rare.In our study,the nutritional and flavor components in the muscle of wild and cultured swimming crab from different areas were systematically analyzed,respectively.The results will provide the basic data for the quality evaluation,the fine traits mining,and the improvement of the grading evaluation standard of swimming crab.Additionally,comprehensive nutritional quality information can also give consumers scientific guidance.We studied the differences in nutritional and flavor components of wild and cultured swimming crab from diverse producing areas.The content mainly includes the following two aspects:1.Wild and cultured swimming crabs from different places and genders were collected,and then the main nutrients in its muscles,like water,ash,crude protein,and crude fat,were determined.The results showed that the muscle protein content of wild male crabs in Taizhou of Zhejiang province was significantly higher than that in Rizhao of Shandong province,while the sodium and calcium content in the muscles of wild crab in Rizhao were significantly higher than those in Taizhou.For the cultured crab,the fat content in the muscle of the male crab in Rizhao was significantly higher than that in Taizhou,while the content of sodium and potassium of the female crab in Taizhou were significantly higher than that in Rizhao.There were some differences in the nutrient contents in the muscle of wild and cultured crabs from different producing areas,which may be accounted for factors such as salinity and heredity.2.Wild and cultured swimming crabs from different places and genders were collected,and then the contents of fatty acids,amino acids,betaine,nucleotides,and cholesterol in crab’s muscles were determined.For wild crab,the essential amino acid(EAA)content and total content of amino acids(TAA)in the muscle of the male crab from Taizhou were significantly higher than that in Rizhao;the docosahexaenoic acid(DHA)content in the muscles of the crab in Taizhou was significantly higher than that in Rizhao;the inosinic acid(IMP)content in muscles of the crab from Taizhou was significantly higher than that in Rizhao;the cholesterol in the muscle of the crab from Rizhao s was significantly higher than that in Taizhou.For cultured crabs,the methionine content of muscles in female crab from Taizhou was significantly higher than that of Rizhao;the eicosapentaenoic acid(EPA)content in the muscles of Rizhao crab was significantly higher than that in Taizhou;the DHA content in the muscles of male crabs from Rizhao was significantly higher than that of Taizhou;the content of inosinic acid(IMP)and adenylic acid(AMP)in the muscle of Rizhao crab was significantly higher than that of Taizhou;the betaine content in the muscles of female crabs grown in Rizhao was significantly higher than that in Taizhou;the cholesterol content in male crabs grown in Rizho was significantly higher than that in Taizhou.There were some differences in the content of flavor components in the muscles of wild and cultured crabs from different areas,which may be accounted for factors such as origins and growth stages.
