Animal husbandry is pillar industry of Inner Mongolia,while sheep farming is important part of Inner Mongolia's animal husbandry.Recently,yield of mutton of Inner Mongolia has increased year by year.However,profit of related firms is generally lower than national average profit level.NIRS which can test mutton quality rapidly,can be used for on-line detection of mutton.It is of great significance to promote the realization of mutton's high quality high price,establish mutton brand,and improve the production level of the livestock industry in Inner Mongolia.This research collected samples of longissimus dorsi,triceps brachii and biceps femoris muscle of three unique Inner Mongolia sheep breeding:Albas cashmere goat,Ujimqin sheep and Daqinshan goat.Crude protein,ether extract and fatty acid of samples are tested according to national standard,near-infrared spectra are scanned.After that,the prediction model of crude protein and ether extract are established with PLS method.Meanwhile,PLS,SiPLS and SVR method are used to find the best method of establishing fatty acid predicted method.The specific results are as follows:(1)In all three breeding of sheep,content of ether extract in longissimus dorsi are significantly higher than two other parts(p?0.05);while only in Daqingshan goat,content of crude protein in longissimus dorsi are significantly higher than two other parts.(p?0.05).(2)Content of crude protein in all three part of Ujimuqin sheep are significantly lowerer than two other breeding(p?0.05).The ether extract content of longissimus dorsi Albas cashmere goat was significantly higher than that of the same parts of the other two breeds(p?0.05).While ether extract content of triceps brachii of Ujimuqin sheep was significantly lower(p?0.05).(3)Content of C18:1 T9(octadecenoic acid)and Cl 8:2T9(trans-linoleic acid)in Albas cashmere goats' longissimus dorsi are significantly higher than two other parts;content of C10:0(capric acid),C12:0(lauric acid)and C14:0(myristic acid)in the longissimus dorsi of Ujimqin sheep is significantly higher than two other parts;content of C16:0 and C18:1C9 in longissimus dorsi of Daqing Mountain goat is significantly higher,while C18:2C9 and C20:3N3 is lower than the triceps and biceps femoris(p?0.05),and the contents of C11:0 and C16:1 in the biceps femoris were significantly lower than those in other parts(p?0.05).(4)The result of establishing prediction model of crude protein and ether extract is fine.Crude protein content predict model's R2=0.937,RMSEC=0.814,RMSEP=1.1,RPD=3.23;while ether extract content predict model's R2=0.914,RMSEC=0.496,RMSEP=0.669,RPD=3.23.(5)Research shows that the best method to establish fatty acid content predict model is SiPLS.The best result of fatty acid content prediction is ?-3/?-6 model which RPD=3.09,while the worst model is C14:0 predict model which RPD=1.53.It can be seen that NIRS can predict the content of nutrients in mutton well,which lays the foundation for rapid meat quality detection and grading of mutton nutrition quality.
