Andrias davidianus glycopetides?ADGPs?were prepared from giant salamander skin secretion by using Aspergillus sp.acid protease.ADGPs have a variety of biological activities.For instance,they have immunological function,scavenging free radical,inhibition angiotensin-converting enzyme activity,anti-fatigue action and inhibition CCl4 acute liver damages.In this paper,application of glycopeptides from Andrias davidianus in the wine preparation and its safety were studied.The results as followed:ADGPs wine was obtained after ADGPs and Saccharomyces cerevisiaea?RV002?were added during cabernet sauvignon vinification.With the increase of ADGPs in fermentation broth,yeast proliferation increased,and the amount of sugar consumed by yeast decreased relatively.On the other hand,the amount of ethanol in ADGPs wine increased with the increase of ADGPs,which indicated that ADGPs could promote the efficiency of yeast using sugar in fermentation.The 30 volatile compounds were identified,including 7 alcohols,9 esters and 2 ketones.In comparison with the wine without ADGPs,ADGPs wine has higher content of ethanol,isobutanol,isoamylol,2-methyl-pentanol,phenethyl alcohol,3,4-dimethyl benzyl alcohol,ethyl acetate and diethyl succinate.Interestingly,the content of phenethyl alcohol in ADGPs wine is2.68 times as much as that in wine without ADGPs.Therefore,ADGPs are the potential active substances,which has the influence on the synthesis of wine aroma.DPPH,hydroxyl and superoxide anion radical scavenging tests showed that DPPH radical scavenging ability of ADGPs wine was also significantly increased?p<0.01?contrast to the wine without ADGPs,and ADGPs wine had better ability of scavenging hydroxyl radical and superoxide anion radical.The safety of glycopeptides from A.davidianus was evaluated by the acute oral toxicity test of mice,the micronucleus calculation of mouse bone marrow cells,and 30 d feeding test of rats.The results showed that no toxicity was found when acute oral toxicity dose was 11764.7mg/kg·BW in ICR mice?female and male?.Glycopeptides from A.davidianus could be categorized as non-toxic according to the acute toxicity dose classification standard.The micronucleus calculation of mouse bone marrow cells showed negative results.There were no adverse influences on growth and development,biochemical indexes,organ-body ratios and histopathological changes of rats by 30 d feeding test.Toxicity test shows that glycopeptides from A.davidianus have no obvious poisonous effects.
