Food safety has a greater and greater impact on people's health and safety.In recent years,with the continuous improvement of people's health awareness and frequent food safety incidents,the issue of food safety has become the hot spot and focus of the entire society and every individual in society.The food safety project is a related to the processing,logistics,marketing and government regulation,market regulation and other aspects of the system engineering.Faced with the current situation of China's food safety technology is relatively backward,the market regulation and norms are not comprehensive,how to take effective measures in food production to increase the level of protection of food production in our country,with very important practical significance.Soy contains protein,dietary fiber and other nutrients,nutrient-rich,rich and delicate taste,loved by our residents,but also constitute an important part of the residents of our dietary institutions.Hunan Shaoyang WuGang tofu history quite a lot,but also in the integration of traditional and modern technology,based on the formation of a unique flavor of Wugang flavor tofu,renowned throughout the country,with its unique brine and special production process in the flavor bean CIMC Zhongzhangzhangchang,occupy a considerable share of the market.In this paper,Shaoguang Wugang flavor dried bean curd as a sample,in view of the quality and safety loopholes in the process of making dried bean curd,combined with the relevant theories and methods of modern food quality and safety management,conducted a hazard analysis of the soybean food chain and established a soybean product Quality and safety regulatory system,designed to adhere to the principle of prevention,to protect the quality and safety of soy products.The main contents of this paper are:First of all,it analyzes the background of the subject,the research status at home and abroad,and its practical significance.Secondly,Shaoyang Wugang flavor bean characteristics,status quo and quality and safety issues were analyzed.The Wugang flavored bean curd food chain is divided into procurement of raw materials Wudu beancurd,WuGang tofu production and processing,WuGang tofu finished circulation,sales of wu guan tung and four major links,and its hazard analysis,the establishment of Yang Wugang flavor dried bean safety and quality control system.Thirdly,The quality control method and monitoring process of Wugang flavored dried bean curd in Shaoyang were analyzed.The relevant theories and methods of statistical process control and its control chart were used to conduct a detailed study on the quality and safety monitoring process of each part of Shaoguan Wugang flavor dried bean curd food chain.This paper integrates the ideas and methods of statistical process control in the HACCP system and applies it in the quality and safety monitoring of the food chain of soy products to enhance the effectiveness of HACCP and to enrich and develop the theory of food quality and safety control.Food safety regulatory system provides a reference for reference.
