Herbal tea as a kind of beverage has been developed rapidly and the output was larger than Coke in recent years.The present papers focuse on the study of Triple Magic Herbal Tea which is a kind of health beverage.With reference to the formula of three famous Chinese medicines Double Magic Pill,Triple Magic Pill and Quartet Magic Pill which have the functions of clearing away heat and promoting diuresis,the ingredients of Triple Magic Herbal Tea were designed with achyranthes root,Rhizoma atractylodis and coix seed.Achyranthes root can clear internal heat,invigorate the blood circulation,stimulate meridians and collaterals,and is antipyretic.R.atractylodis can dispel dampness,strengthen spleen,relieve wind chill,and enhance appetites.Coix seed can promote metabolism and care skin.Therefore,this herbal tea has the effects of heat-clearing,detoxifying,promoting metabolism and enhancing appetite.The main results are as follows:(1)The optimal process conditions for extracting oleanolic acid from achyranthes root were 70%ethanol,extraction time of 20 min,material-liquid ratio of 1:25.The extraction rate of oleanolic acid was 11.93 mg/g under above conditions.The optimal process conditions for extracting polysaccharides from Rhizoma atractylodis were extraction time of 30 min,material-liquid ratio of 1:25,and pH 6.The extraction rate of R.atractylodis polysaccharides was 7.30%.The optimal process conditions for extracting polysaccharides from coix seed were extraction time of 20 min,material-liquid ratio of 1:25,pH 5.The extraction rate of coix seed polysaccharides was 3.77%.(2)DPPH method was used to determine the antioxidation and free-radical scavenging effects of polysaccharides from R.atractylodis and coix seed.The results showed that there was a good dose-effect relationship between polysaccharide concentration and DPPH scavenging rate(3)The optimal formula of the beverage was determined by orthogonal method and fuzzy mathematics,which was consisted of 2%achyranthes root oleanolic acid extract,1%polysaccharide extract(consisted of 0.5%R.atractylodis polysaccharide and 0.5%coix seed polysaccharide),2%sucrose and 0.03%citric acid.
