In order to understand the compositional characteristics and functional properties of yak whey powder and yak whey protein concentrates,this experiment used acid-precipitated whey to prepare yak milk's native whey powder?YNW?and use cheese processing to produce?ie,enzymatically?,The whey waste liquid of pharmacy is prepared from yak milk sweet whey powder?YSW?,concentrated by 3500 Da roll membrane ultrafiltration to obtain yak milk's native ultrafiltered whey powder?YUNW?and yak milk's sweet ultrafiltered whey powder?YUSW?,fractionally purified by using a regenerated cellulose membrane of 5000 Da,10000 Da,and 14000Da to obtain yak milk's native whey protein concentrate 1?YNWPC1?,native whey protein concentrate 2?YNWPC2?,native whey protein concentrate of yak milk 3?YNWPC3?,sweet whey protein concentrate 1?YSWPC1?,sweet whey protein concentrate 2?YSWPC2?,sweet whey protein concentrate 3?YSWPC3?of yak milk were obtained,and the powder rate and protein extraction rate were measured.total protein,lactose,ash content,pH,and other major components,analysis of the solubility,water-holding capacity,oil-holding capacity,foaming,emulsifying and thermal stability properties of yak whey and yak whey protein concentrates,Identification by SDS-PAGE yak bovine whey powder and whey protein concentrate whey protein composition.The results show:1.The yield and protein extraction rate of YSW were significantly higher than that of YNW?P<0.05?.The total protein content of YSW was17.323%.The total protein content of YSW was significantly higher than that of YNW?P<0.05?.The total protein content,lower ash and lactose content;YNW better water-holding characteristics,YSW solubility,oil-holding,foaming ability,foam stability,emulsifying activity and emulsion stability is better than YNW.2.The powder yields of YUNW and YUSW were 4.181%and 4.215%,respectively.The protein extraction rates were 70.431%and 76.619%.The total protein content of YUNW and YUSW were significantly different,and the ash content and p H were significantly different?P<0.05?.YUSW had higher The total protein content,lower ash content.YUNW has good water holding property,and the ultrafiltration and YUSW raw materials of yak sweet whey waste liquid during the early stage of pasteurization treatment effectively improve the solubility,oil-holding property,foaming property and emulsifying property of YUSW.YUNW and YUSW are 60°C began to denature,85°C instability.3.The total protein content of YNWPC1 and YSWPC1 was 34.787%and38.680%,the total protein content of the other 4 YWPCs was between 80%and 90%,the total protein content of YSWPC3 was the highest,89.143%;the ash content of YNWPC2 and YSWPC2 was low,not Lactose-containing,YNWPC3 and YSWPC3contain no ash and lactose content;YNWPC1 has higher water-holding capacity than other YWPCs.YSWPC3 has higher solubility,oil-holding capacity,foaming ability and foam stability,and EAI and ES.YWPC began to destabilize at 60°C and began to denature,with 85°C being the most unstable.4.The monomeric proteins in yak whey powder and YNWPC1 and YSWPC1whey protein are mainly?-LA and?-Lg,and YNWPC2,YSWPC2,YNWPC3 and YSWPC3 are mainly?-LA,?-Lg and BSA.
