Hydrolyzed whey protein is rich in bioactive peptides.It not only provides essential nutrients for human growth,but also demonstrates many biological functions,including antianaphylaxis,cholesterol and blood pressure lowering activity,immunity regulation,and growth promotion.In the present research,the enzymolysis of concentrated whey protein,together with the embedding and spray-drying of hydrolyzed whey protein were studied.Besides,the biological functions of hydrolyzed whey protein spray-drying powder,which is applied in infant formula,were also investigated.The results are as follows:1.Trypsin is the most suitable enzyme for whey protein enzymolysis.The optimal enzymatic hydrolysis conditions are:initial pH 7.2,hydrolysis temperature 58?,enzyme/substrate ratio 0.032.The hydrolysis degree of whey protein in the optimal conditions is 21.5%.2.Maltodextrin is the most suitable embedding wall material for hydrolyzed whey protein.The optimal spray-drying conditions are:hydrolyzed whey protein concentration 27.75%,inlet temperature 190?,inlet air flow rate 3.72 m 3/min.The sensory property and solubility score of hydrolyzed whey protein spray-drying powder in the optimal conditions is 17.4(total score 20).3.Hydrolyzed whey protein spray-drying powder can significantly increase the carbon phagocytic index of mice,indicating that it can enhance the non-specific immunity of mice.4.Hydrolyzed whey protein spray-drying powder can significantly decrease the serum 50%hemolytic value of sheep red blood cell(SRBC)sensitized mice,indicating that it can inhibit the abnormal specific humoral immunity of mice.Adding hydrolyzed whey protein spray-drying powder in infant formula can increase the inhibition effect of infant formula on the abnormal specific humoral immunity of mice.5.Hydrolyzed whey protein spray-drying powder can significantly decrease the T cell proliferation in mice,indicating that it can inhibit the abnormal specific cellular immunity of mice.Adding hydrolyzed whey protein spray-drying powder in infant formula can increase the inhibition effect of infant formula on the abnormal specific cellular immunity of mice.6.Hydrolyzed whey protein spray-drying powder can significantly decrease the blue spot area and OD value of rats,indicating that it can inhibit the passive cutaneous anaphylaxis in rats.Adding hydrolyzed whey protein spray-drying powder in infant formula can increase the inhibition effect of infant formula on the passive cutaneous anaphylaxis in rats.
