| In this paper,Leccinum aurantiacum gray,Boletus edulis,Sarcodon imbricatus,Amanita Caesarea,Armillariella tabescens and Russula lepida in Ganzi were used as experimental materials,to study its nutritional components;And in sarcodon imbricatus as raw material,use of rapid solvent extraction of the crude polysaccharide the extraction process,in order to provide reference for the study of wild edible fungi in Ganzi.(1)To analysis of Leccinum aurantiacum gray,Boletus edulis,Sarcodon imbricatus,Amanita Caesarea,Armillariella tabescens and Russula lepida moisture,ash,total sugar,crude fat,crude protein,K,Na,P,Zn,Ca,Mg,Mn,Cu,amino acid,found Leccinum aurantiacum gray with the highest water,sodium,copper,tyrosine;Boletus edulis contains the highest protein,aspartic acid,threonine,glutamic acid,glycine,alanine,methionine,isoleucine,bright Arginine,phenylalanine,lysine,arginine,proline,tryptophan,cysteine,;Amanita Caesarea contains the highest manganese element,the magnesium element,histidine;Armillariella tabescens contains the highest total sugar and valine;Russula lepida contains the highest otalash,crudefat,potassium,calcium,iron,zinc,phosphorus.The nutritional value of the six wild bacteria in Ganzi Prefecture is higher than that of the common edible fungi,and the nutritional value of the wild bacteria is higher than that of other wild species in other areas(2)To study Leccinum aurantiacum gray,Boletus edulis,Sarcodon imbricatus,Amanita Caesarea,Armillariella tabescens and Russula lepida amino acid of that essential amino acid score(AAS),chemical score(CS)and essential amino acid index(EAAI)analysis showed that Leccinum aurantiacum gray,Amanita Caesarea,Armillariella tabescens and Russula lepida were the first limiting amino acid methionine and cystinol;Boletus edulis the first limiting amino acids leucine and isoleucine;sarcodon imbricatus the first limiting amino acid leucine.Its essential amino acid index was close to 1,so it had high nutritional value,and was an ideal source of protein(3)The use of crude polysaccharide extraction solvent extraction instrument sarcodon imbricatus in consideration,solid-liquid ratio,temperature,extraction time,extraction times,through the single factor test,orthogonal test analysis,obtained the rapid solvent extraction of crude polysaccharide extraction: solid-liquid ratio 1: 10,temperature 75 degrees.,3 times of extraction,the extraction time was 10 min,the crude polysaccharide determination under this condition was 19.89%.The crude polysaccharide and determination of antioxidant activity,when the concentration of the meat from the warped bract crude polysaccharide was 1mg/mL,the DPPH removal rate is 72.64%;when the concentration of 10mg/mL,the hydroxyl The scavenging rate and superoxide anion radical scavenging rate were 88.23% and 99.88%,respectively,and the reduction power was 0.498.The DPPH clearance rate of IC50 was 0.24mg/mL,the hydroxyl radical scavenging rate of IC50 was 2.11mg/mL,and the superoxide anion radical scavenging rate was IC50,2.01mg/mL. |
