The instant coffee beverage is solid beverage that is prepared by mixing.It is made of coffee produts,also contains one or more other food raw materials,such as sugar,milk or dairy products,non-dairy creamer,salt,flavor,etc.Mixing is key step in the production process of instant coffee beverage,and plays an important role on the product quality,such as nutrition,sensory,physical and chemical,etc.Mixing homogeneity reflects mixing effect.The instant coffee beverage often mixes unevenly,that result in product quality instability.But,there were few studies on the mixing homogeneity of instant coffee beverage.In this article,tracer method,chloride ions potentiometric titration,single factor experiment,orthogonal experiment,etc.,will be used to research mixing homogeneity,then establish method of improving product mixing homogeneity.Major research conclusions as below:(1)The sensory quality of instant coffee beverage is positively correlated with the mixing homogeneity.The higher homogeneity,the lower coefficient of variation(abbreviation as CV),and the product sensory quality is closer to standard.The nutrition stability of instant coffee beverage is positively correlated with product mixing homogeneity.The higher homogeneity,the lower CV,the product fat is closer to average,the nurition more stable,and the lower risk of violation to the standard.The mixing homogeneity CV(%)3.70 is the minimum limit of the instant coffee beverage mixing homogeneity.(2)Different granularity coffee,non-dairy creamer,white granulated sugar and salt have different degree influence on the homogeneity of instant coffee beverage.In the mixer(supplier: Gericke,type: GMS H 700),the best granularity of raw materials for formula R001 instant coffee beverage product is: the granularity of salt,coffee and white granulated sugar is 100-250?m,and non-dairy creamer is 250-450?m,and influence sequence of raw materials granularity for mixing homogeneity is: salt > coffee > non-dairy creamer > white sugar,the best granularity raw materials verified experiment shew that the product mixing homogeneity CV(%)was reduced to 3.72.In actual production or experiment,the granularity combination of raw materials can be improved by changing the number of pipeline elbow or grinding machine grinding diameter,in this way product mixing homogeneity can be improved.(3)Different mixing time,mixing speed,loading factor and feeding sequence,have different degree influence on the mixing homogeneity of instant coffee beverage.In the feeding sequence test,white granulated sugar is the best thinner for premix.Firstly,prepare the premixture with diluent white granulated sugar and small proportion(less than 0.5%)raw materials,then put it into production,it can improve the product mixing homogeneity.The production process parameters of the premix of formula R001 product in V mixer(brand: gem,type: GHJ-50): the total load of each mixing batch is 10.01kg(loading coefficient 23.45%),the diluent(white granulated sugar)is 8.085 kg,the mixing time is 10 min,and order of feeding is not successive.(4)In the mixer(supplier: Gericke,type: GMS H 700),under the condition of best granularity of raw materials(salt,coffee and white granulated sugar is 100-250?m,non-dairy creamer is 250-450?m),and feeding sequence(firstly prepare premix,secondly feed half non-dairy creamer,coffee and sugar,and then feed premix,finally feed the rest non-dairy creamer,coffee and sugar),the instant coffee beverage formula R001 production process optimum parameters: mixing time 180 s,mixing speed 54r/min,loading factor 70%.The influence order of the four production process parameters on the product mixing homogeneity: loading factor> mixing time> mixing speed.With the optimum production parameters and the optimum granules raw material,t he product mixing homogeneity CV(%)was reduced to 3.62.The improvement of production process parameters can improve the product mixing homogeneity.(5)Under the same condition of raw materials granularity,mixer and production process parameters,the smaller difference between the other formula and the formula which has been verified under this condition,the closer the mixing homogeneity of the other formula with the verified formula,otherwise the greater difference between them.Before different formula product mass production,the mixing homogeneity should be tested and verified in this condition.(6)Under the condition of raw materials granularity are same but mixer(supplier: Gericke,model: GMS H 600)is different,produce same formula R001 product,the optimum production process parameters: mixing time 150 s,mixing speed 61r/min,loading coefficient 70%;the influence order on mixing homogeneity: loading coefficient > mixing speed > mixing time.The optimum production process parameter verification test shew that the mixing homogeneity CV(%)was 3.42.In order to obtain the optimum processing parameters in this condition,single factor and orthogonal experiments should be done before same formula product mass production.
