Ginkgo nutlet because of its toxic,can not be eaten,but also because of its bitter and unpalatable,resulting in ginkgo backlog,the price fell year by year,to the ginkgo industry caused a serious impact.But the ginkgo tree is called"the whole body is a living fossil",is the landscape plants,in recent years,growing acreage,and ginkgo production has increased year by year.However,the process of effective detoxification of ginkgo nuts is almost no.Therefore,it is very important and meaningful to find an effective detoxification process and make it a trend towards food product research.The main research results of this paper are as follows:?1?In the use of bitter almond bitter does not work in the case,through continuous exploration,to determine the final method and process conditions.The extraction temperature was 50?,the time was 24 h,the ratio of nuts to A was 1:20,and the concentration of Na2CO3 was 0.5%.As a result,ginkgo biloba bitter.?2?In the ginkgo nuts off the process of suffering,to study the changes in the main nutrients,for the determination of the conditions to provide a reasonable basis for treatment.The results showed that the loss rate of soluble protein and?-amino acid was1.39%and the loss rate of reducing s?gar was 2.84%.The content of asparagine and glutamine in Ginkgo biloba was 0.0706%.?3?The bitter taste of ginkgo biloba were discussed.It is clear that the bitter substance in ginkgo biloba is a kind of polar substance.The ultraviolet scanning shows that the bitter substance contains benzene ring or heterocyclic aromatic hydrocarbon structure.The infrared spectroscopy of the white nut before and after biting is shown,and the spectrum shows that the absorption peak The change was mainly from 2360cm-1,2067 cm-1 and 1625 cm-1 to 2368 cm-1 and 1645 cm-1.These changes indicate that the unsaturated bond has changed and the bitter substance is related to the number of unsaturated bonds.?4?The toxic substances of Ginkgo biloba were studied.The cyanide was not detected within the limits of the detection method using the Prussian blue method and the silver nitrate titration method.The detoxification agent was used as the detoxification agent and the white nuts were detoxified.The result was The ratio of nuts to B was 1:20,and the detoxification time was 10 h at room temperature.The results showed that the maximum content of toxic substances in ginkgo biloba was 14.7mg·kg-1.To use the chemical method and instrumental characterization such as UV,IR,HPLC-MS and fluorescence spectrometer determined the structure of the toxic substance was be 5'-glucoside-4-methoxypyridoxine.?5?Using the results of the previous studies,the research on the food product of the white nuts after detoxification.
