Coix seed,one of the earliest grasses developed and utilized,has a wealth of nutritional value.In recent years,there has been more research on the efficacy of Coix seed,and as functional grains,it has gradually entered the public's sight.As the coix seed is easily oxidized,deteriorated and worms during the storage process,it has a bad taste and seriously affects the quality of Coix seed.Therefore,the storage of Coix seed is a problem that needs to be solved at this stage.This paper uses the Coix seed of Chengdu,Suqian,Yuexi,and Shitai as raw materials to compare the basic status quo of production areas and study the differences between basic nutrients and functional components.By changing the storage temperature,storage shape,and using different preservation measures,To study the quality changes of Coix seed during the 180 days storage,establish the Arrhenius storage model,provide theoretical data and practical basis for the research of Coix seed's storage.The results of the study are as follows:1.The protein content of nutrients measured in the four production areas was between16%and 18%.Among them,Suqian Coix seed contained the highest starch content;Shitai Coix seed contained the highest protein content;Shitai Coix seed contained the lowest fat content;Suqian Coix seed contained the highest fat content.The fat content in barley is about twice that of other cereals.2.The content of three main active substances in Coix Seed is total flavonoid content>polyphenol content>alizarin content.Among them,the contents of the Chinese wolfberry kernels in Coix seed of Chengdu,Yuexi and Suqian were all less than 0.1 mg/g,and the contents of the Chinese wolfberry fruit and flavonoids in Shitai Coix seed were the highest.Comprehensive evaluation of the quality of Shitai Coix seed is the best among the four Coix seed.3.The stability of moisture content during storage is more resistant to storage.The PA composite film material has a better effect of suppressing the increase of the fatty acid value than the PET film and the aluminum film packaging material.4.TBHQ had better effect on inhibiting the increase of MDA content in the four production areas.Different antioxidants were needed to inhibit the increase of fatty acid value in different habitats.TBHQ had the best effect on Chengdu and Suqian Coix seed and tocopherols.It has the best effect on Shitai Coix seed,calcium ascorbate has the best effect on the effect of Coix seed.5.Arrhenius model was established based on fatty acid values.The Arrhenius model of Coix Chengdu is t=[ln?X?-ln?X0?]/e?-2.1346/T-5.0966?,Suqian Arrhenius model is t=[ln?X?-ln?X0?]/e?-1.6016/T-5.150?,the Arrhenius model of Coix Yuexi is t=[ln?X?-ln?X0?]/e?-1.0894/T-5.3025?,and the Shitai Arrhenius model is t=[ln?X?-ln?X0?]/e?-3.5247/T-5.2859?.
