Red jujube,Lycium barbarum L.have a variety of nutrients and biological active ingredient.They have very high edible value and medicinal value.In this paper,red jujube and Lycium barbarum L.were selected,the technology of compound clarified juice was studied.The optimum technological parameters of the extraction process of jujube(dry)were determined by orthogonal optimization.The optimum technological parameters of the extraction process of Lycium barbarum L.(dry)were determined by Response Surface Methodology;The best proportion of jujube juice and Lycium barbarum L.juice was determined by sensory analysis;And the compound juice clarification method,main composition change and allocation is studied.The results are as follows:1.The best conditions were selected by studying on the effects of four factors about the extraction rate of red jujube and Lycium barbarum L.,including the amount of water added,the extraction time of raw materials,the amount of enzyme added,the extraction temperature of raw materials.Through orthogonal test,on the basis of single factor,it is concluded that the best extraction conditions of the extraction red jujube by pectin enzyme for:the volume of water is 8 times of the quality of jujube,leaching temperature was 55℃ leaching time was 2 h,the volume of enzyme was 0.4%.Pectin enzyme extraction medlar by using single factor and response surface Box-Behnken optimization were used in the extraction of Lycium barbarum L.,the best extraction conditions was obtained,which the amount of water added is 7.6 times,leaching temperature is 56 ℃,the amount of enzyme added is 0.3%,the leaching time is 79min.2.Through the sensory evaluation,determining the best ratio of juice,jujube juice:Lycium barbarum L.juice is 3:2,At the same time,the content of soluble solids in the juice was 11 Brix,and the polyphenol content was 1.409 g/L.3.The compound juice was clarified by the clarifying agent of gelatin,bentonite,chitosan.Three clarification methods were optimized by single factor and orthogonal test.Experiments on the best clarification condition about gelatin clarifier as follows:the amount of gelatin added 15g/L,180 min,temperature is 30℃.Under the condition,the average transmittance of clarified juice is 80.1%;the best clarification condition about bentonite clarifier as follows:the amount of bentonite added is 2g/L,the temperature is 40℃,40 min.Under the condition of above,the average transmittance of clarified juice is 90.8%;the best clarification condition about Chitosan clarifier as follows:the amount of chitosan added is 0.55g/L,60 min,the temperature is 30℃.Under the condition of above,the average transmittance of clarified juice is 90.2%.4.The color,total phenol content,transmittance,soluble sugar content,solids and others were acted as indicators.And comparing the clarification effect of three kinds of optimized methods.Results show that the compound juice after clarification by Bentonite has highest transmittance and the best color values,the change of the soluble solids content and total sugar content were lesser,it is the best clarification method in three methods.5.Through the design of experiments,the optimum allocation of compound juice with carbon dioxide was achieved.The amount of water added is 40%,The amount of citric acid added is 0.8%,The amount of honey added is 8%,the inflation be conducted on 3 times. |
