As an important part of the management of catering enterprises,cost control is one of the key factors to determine whether the whole catering business can realize the maximization of the enterprise,because the whole process of its business activities includes purchasing,cooking,reception,service and even the overall decoration is closely related to it.In the current food and beverage market,more restaurants in the emphasis on taste and unconventional,ignoring the importance of cost control in catering management.Excessive attention to the number of customers and product innovation,although this can attract more people in the opening stage,forming a good business situation,but under the grand occasion,hidden dangers hidden among them.To strengthen a persistent small catering enterprises,in a completely competitive food and beverage market,in addition to doing the surface work,internal strength of the practice is to allow enterprises in the complex food and beverage market occupies a foothold in one of the important factors.A good cost control system allows catering enterprises to have more energy and financial resources to focus on business and food updates and other important issues,to enhance the core competitiveness of catering enterprises,rather than waste it in the internal links of communication and coordination of consumption.Some large hotel groups have a sound operating internal control system,however,small catering enterprises because of its establishment and operation of more determinants of human factors,management has a certain degree of randomness and subjectivity,so the management of the quality and cost control ability has a higher demand.How to learn from the successful experience of large hotel group and establish and perfect the cost control system of small-scale catering enterprises is of great practical significance according to the characteristics of small-scale catering enterprises.This paper will use Huimeizi Restaurant Management Co.,Ltd.as a research model,and use the methods of literature reading,investigation and case analysis to put forward the concrete measures to solve the cost control of small catering enterprises,and discuss how to do the cost of small catering enterprises control work,and strive to provide some useful reference for account for the vast majority of small restaurant operators in the market.
