In the late 1990 s,the economy of China has entered the stage of rapid development,in which,the demand for meat products has increased dramatically.Not only has the economic development brought demand growth,it has also facilitated the increasing transformation of the processing of meat products in China.Many enterprises specialized in meat products have risen like bamboos after a spring rain.With the prosperity of the meat product processing industry in China,various questions related with meat products have emerged in endlessly.For instance,the second invasion of zombie meat,the fourth ranking of Yurun's disqualified meat products and the outburst of the new type of clenbuterol incident.These are all a reflection of the defective safety guarantee system of meat products in China.These management-related problems have seriously affected the consumer's health and restricted the development of enterprises specialized in meat products.Large and medium-scale meat product processing enterprises are taken as the main object of research in this paper.Methods like chart display and practical survey are adopted and the safety and quality guarantee system of meat products are analyzed.The principle of management is adopted,and the existing quality guarantee system of Chinese meat product processing enterprises is emphatically introduced.Furthermore,the theory of external management is integrated on this basis,and the advantages of Enterprise Z,which is a representative of large and small-scale meat product processing enterprises,in safety guarantee system are used as a reference.The integration of internal quality and safety guarantee system and external management theory is taken as the starting point,through which,certain countermeasures and suggestions of improving the safety guarantee system on Chinese meat products are proposed.They are of great practical significance to the settlement of meat product safety incidents.
