Chitosan oligosaccharide(COS)is a kind of beneficial prebiotics to the host.However,there were few studies on the immunity and product quality of sea treasures such as sea cucumbers.In this experiment,two treatment groups were divided into blank control group(fed with ordinary diet)and experimental group(fed with 0.5%diet addition of COS),and the experiments were carried out for 8 weeks.In this study investigated the activity of non specific immune related enzymes and antioxidant enzymes in the coelomic fluid of sea cucumber was studied,Intestinal tract tissue morphology,bacterial community structure;the expression of mRNA and immune related proteins in immune related genes;the effect of sea cucumber product quality.The main results are as follows:(1)The experimental results showed that the addition of chitosan oligosaccharide can significantly increase the activity of NOS,CAT,T-SOD,LZM.T-AOC,GSH-Px,and reduced the content of MDA significantly.The results indicated that the addition of chitosan oligosaccharide could enhance the non-specific immunity and antioxidant capacity of sea cucumber.(2)These results were about the effect of chitosan oligosaccharide on the intestinal tract of sea cucumber.In the gut morphology,diet addition of COS significantly changed the intestinal morphology of sea cucumber.The addition of COS in diet could change the structure of intestinal microflora in sea cucumber.Diet addition of COS significantly increased the expression of related genes in the intestine of sea cucumber lys,p105,Rel mRNA,significantly reduced the expression of related genes TRAF6,TLR,MyD88,Toll,NF?BI mRNA.The addition of COS in diet significantly increased the expression of three kinds of immune related proteins,such as copper,zinc superoxide dismutase,heal shock protein,and TGF-? activated kinase,in the gut of sea cucumber.(3)The addition of COS could improve the quality of sea cucumber.The experimental results showed that the addition of chitosan oligosaccharide in diet could improve the hardness,chewiness and elast icity of the body wall of the sea cucumber,reduced the viscosity of the body wall of sea cucumber,and improved the taste.The content of crude protein increased by 22.02%,the ash content increased by 6.67%and the crude fat content decreased by 13.43%(p<0.05).The addition of COS in diet significantly decreased the content of saturated fatty acids and increased the content of polyunsaturated fatty acids(p<0.05).The contents of essential amino acids and total amino acids in the body wall of sea cucumber(p<0.05)were significantly increased by adding COS.The content of Fe increased by 21.35%,K content increased by 17.09%and the content of Zn increased by 7.34%(p<0.05).In conclusion,the addition of COS could improve the immune ability and improve the quality of sea cucumber.
