| With the rapidly development of dairy Industry in China, the problems become mange bottleneck key to breakthrough dairy production, the development of Simmental Cattle can effectively resist market risk, and Simmental Cattle’s milk is also a kind of high quality raw milk. But in China, the detailed study of Simmental Cattle’s milk is very lack. This study aims to analysis and evaluation the quality of Simmental Cattle’s raw milk and to establish the SDS-PAGE Fingerprint of Simmental Cattle’s milk.This experiment mainly from the following four aspects. First, study the difference of chemical, amino acids and fatty acid composition between the birth order lactation, seasonal of the Simmental Cattle. Second, study the difference of two heating conditions on the effect of several important thermal indexes of Simmental Cattle’s milk,at the same time,analysis different birth order lactation、lactation、seasonal factors to thermal indexes of Simmental Cattle’s milk refers to the influence.Third, study the influence of the processing quality by birth order lactation、lactation、seasonal factors. Fourth, to establish the relative protein fingerprint of Simmental Cattle’s milk through the SDS-PAGE electrophoresis method.The results were as follows:1. The protein content of simmental cattle’s milk in the second birth order lactation reached the ceiling value, and remarkable higher than1and4birth order lactation (p<0.05).The fat content and lactose have no significant difference (p>0.05).The birth order lactation on the influence of milk’s chemical composition is not remarkable.The protein and fat content will be drop along with the lactation.And the prontein content of the early lactation is remarkalbe higher than others (p<0.05).Different season also affect the normal milk’s chemical composition.In the winter,the protein and fat content is remarkable higher than other seasons(p<0.05).The protein (4.22%) and fat (4.27%) content of simmental cattle’s milk is remarkable higher than Holstein.The difference of lactation is not remarkable (p>0.05).the simmental cattle’s milk is a kind of good nutritional value raw milk.2.The quality of Simmental Cattle’s milk is also have a certain effect on heat treatment. Effects of heat treatment conditions1on quality of Simmental Cattle’s milk among different fetal times,seasons and different lactation period is remarkable (p<0.05).3.Analysis the performance of yogurt fermentation quality and structure characteristics, the results showed that, birth order lactation、lactation and seasonal factors is remarkable influence the processing quality of Simmental Cattle’s yogurt (p<0.05)4. Establish Simmental Cattle’s milk relative fingerprint by SDS-PAGE and use relative fingerprint analysis of the different Simmental Cattle’s milk,and the results showed that different Simmental Cattle’s milk have good Similarity. |
