Tea is a kind of health drink.With the improvement of people's living standard,more and more people are drinking tea for their health.The safety and health quality of tea has become the primary demand for people to buy tea.Tea Initial Processing is not only an important link in the formation of tea quality,but also the key control link in the implementation of tea cleaner production.At the same time,it is still a weak link in the quality of tea safety and health in China.In order to find out the status of the cleaning of tea processing in Shandong Province,24 typical tea processing enterprises of different ages and scales in Rizhao,Weihai,Tai'an and Linyi were investigated by questionnaire and field investigation.The contents of this survey include nearly 60 indicators in five aspects: the basic situation of enterprises,the construction and layout of tea factories,the installation of functional zones,the processing equipment and products.Then the key control points that restrict the initial processing cleanliness of tea in Shandong were screened.Moreover,using the analytic hierarchy process(AHP),Delphi method and three scoring methods(percentile deduction method,grade comprehensive scoring method and one vote veto),the evaluation index system of tea processing cleanliness grade was constructed,and the evaluation system was used to evaluate the 24 tea enterprises.In addition,following the principle of “advanced &reasonable,economic & application”,the function area setting and layout scheme of tea processing plant are optimized and designed by modular design method.The main conclusions are as follows:?The key control points that restrict the tea initial processing in Shandong province are functional zoning and layout,temporary storage and transport of tea,energy,raw material(fresh leaves),workers and management systems.? System of cleanliness grade for primary processing of tea can be divided into three levels,namely,the target level,the element level and the evaluation level.Among them,the element level includes 6 aspects,namely,the functional area of the processing plant,the decoration materials,processing equipment,fresh leaves,cleanliness and hygiene personnel.There were 15 indexes in the index evaluation level,and the index of the weightscore was the following: the fresh leaf source type(0.14),the cleanliness(0.11),the hygienic standard(0.10),the personnel quality(0.10)and the energy type(0.09).? The overall cleanliness level of tea processing enterprises needs to be improved in Shandong.Of the 24 initial tea processing enterprises,16 tea enterprises were assessed for the limited conditions,accounting for 67%.In addition,1 of the "4A" level,5 of the "3A" level,and 2 of the "2A" level.? The layout optimization design for tea processing plants based on function division module was put forward.It divides the tea initial processing plant into 4 functional modules,which are raw material area,processing area,packaging storage area and auxiliary place.Then,two complete designs of "?" and "U" are also put forward.The optimization design is popularized and applied in 1 enterprises in Shandong.
