In this paper,the method for the determination of the content of effective components in fermented soybean(SSP)and its production technology were studied.In Chapter 1,the research status of active ingredient,pharmacological action,production technology and quality control of SSP were introduced.Based on the functions and indications of SSP paste,the ancient literature and literature were summarized,and the main active components of genistein and daidzein were determined.In Chapter 2,a HPLC method was established for the simultaneous determination of genistein and daidzein in SSP.The effects of different factors on separation and sensitivity were investigated.The results show that the separation time is short,the separation accuracy and precision are good.The extraction process is complex and time-consuming,but the results are stable and reliable.Detection method can be used as a light SSP active ingredient content,standards for monitoring and quality control of the production process of light SSP production has a certain reference value for Chinese Pharmacopoeia light improve the quality standard for SSP.In Chapter 3,the production process optimization was carried out by using single strain fermentation and the content of genistein and daidzein as indexes.By single factor experiment,the fermentation time,fermentation temperature,humidity,medicine juice mix of soybean volume and other parameters were investigated;after comprehensive analysis,the best processing technology of this experiment was obtained.These experiments explores new light SSP fermentation process,shorten the fermentation time,simplifies the fermentation process,provides experience for the exploration of light SSP standardized production,more effective control of the uniform and stable light quality of SSP.
