Tieguanyin is a semi-fermented tea,mainly produced in Anxi,Fujian Province,it possess unique flavour and healthcare functions.In this paper,Tieguanyin was used as the research object,the different coating fibers,extraction time,extraction temperature on the extraction effect were examined using headspace solid phase microextraction(HS-SPME)method combined with gas chromatography-mass spectrometry(GC-MS)detector,then volatile components from different processing technology,different season,different origin Tieguanyin tea were detected and analyzed by qualitative and quantitative methods.And fingerprints of Tieguanyin teawith visual processing using data processing means such as calculat the similarity and overlap rate of chromatograms,extract the common peak,clustering analysis and so on.The experimental results are as follows:(1)The optimum SPME fiber for extract volatile components from Anxi Tieguanyin is 50/30 μm DVB/CAR/PDMS,the most optimal extraction time and temperature are 60 min and 70℃ respectively.(2)52,53,and 68 kinds of volatile components were identified in lingering charm type,eliminate green type,and sour fragrant type Anxi Tieguanyin tea,respectively.A total of 77 kinds of volatile compounds in three types tea.There are 41 common peaks in them,mainly including Nerolidol,alpha-Farnesene,Indole,Propanoic acid,2,2-dimethyl-,2-phenylethyl ester and so on.Though the composition and content of volatile component are different when change the processing technology of Tieguanyin tea,they retain characteristics of volatile components in Tieguanyin.(3)44、50kinds of volatile components were identified in the spring and autumn Tieguanyin tea,a total of 63 kinds of volatile compounds in two seasons samples,among them,31 compounds are their common compositions.Tieguanyin volatile components in different seasons have obvious seasonal characteristics,and their common compositions can be used as one of the important indexes of Tieguanyin season estimate.(4)With the calculation of similarity and peak overlap rate,the extraction of common peaks and cluster analysis to fingerprints of different origin Tieguanyin,the results showed that,the source of Tieguanyin tea samples are close,their similarity are higher,there exist corresponding relationship between clustering results and origin,besides,the 15 common peaks of extracted are basic components of Tieguanyin volatiles,can be used as a necessary condition for origin identify of Tieguanyin tea.
