High-fiber diet biscuits as a new weight-loss health food have some nutritional deficiencies.In order to meet the nutritional needs of the consumer groups to ensure that the weight loss crowd safety in the daily intake of necessary nutrients demand on the basis of weight loss,does not produce the negative impact of nutritional deficiencies,composition analysis and evaluation of the nutrition of the high-fiber diet biscuits determine the content ofvarious nutrients to supplement insufficient nutritional supplements in the form of instant film,and nutritional assessment.In this study,based on the daily recommended intake(RNIs)analysis of the deficiencies of various nutrients and found that the iodine,manganese and vitamin E of biscuits content has reached the standard recommended daily intake,so no longer need to supplement.Other micronutrients such as vitamin A,vitamin C,vitamin B1,magnesium,zinc,iron,calcium,copper,should be select the appropriate nutritional supplements to add according to Fortified Food Standard GB14880-1994,and to determine dosage.Effervescent tablets were prepared by wet granulation production process.Select the addition of acid,composite alkali agent,sweetener and flavor as the investigated factors.Through the orthogonal design,take the tablet disintegration time and sensory quality inspection as the indicators to get the formulation optimization.The optimization results:aspartame adding 3.0%,citric acid adding 45%,composite alkaline agent adding 35%and flavors adding 1.5%.Under these conditions,the solubility of instant film was 90.53%,disintegration time of 109s,gas production for the 137mg/g and pH 5.03.Nutritional quality index method and in vitro digestibility evaluation has been used to evaluate the high-fiber diet biscuits and nutrition supplements.According to the result of the nutritional quality index method,INQ values of various nutrients in the high-fiber diet biscuits are greater than 1,indicating that the nutrients in the food supply is higher than the thermal energy supply,so long-term consumption does not exist the risk of nutrient deficiency or excess thermal and is in line with the basic requirements of the diet food.However,in accordance with the biscuits daily consumption of 60g of this amount of computing,most of the nutrient content of the biscuits a day is less than human daily recommended intake,with nutrition supplements instant tablets taken together,can not only achieve weight loss results,but also ensuring that the various elements of the human body needs nutrition intake.Take the Pepsin-trypsin two-step in vitro digestion method to determine the digestibility of protein and total sugar of high-fiber diet biscuits.By computing the in vitro digestibility of protein is 84.24%,in vitro digestibility of the total sugar is 82.23%.The higher digestibility results show that the digestion is better.
