Physalis alkekengi L.is Solanaceae Physalis alkekengi plant.Physalis alkekengi seed is a byproduct of Physalis alkekengi juice.The microwave-assisted extraction method is used to extract the phytosterols from the Physalis alkekengi seed.The effects of microwave irradiation on the cell structure of Physalis alkekengi seed were studied by SEM and TEM electron microscopy.Microwave assisted extraction effect.Research on silica gel column chromatography of Physalis alkekengi phytosterols purification conditions.The results were analyzed by infrared spectroscopy and GC-MS.At the same time,the efficacy of Physalis alkekengi phytosterols antibacterial and blood lipid was also studied.And product Physalis alkekengi phytosterols effervescent tablets.The results are as follows:The optimum conditions for microwave-assisted extraction were as follows:liquid-to-material ratio 11(mL)was determined by single factor and response surface analysis method.The optimum conditions for microwave-assisted extraction were as follows:1(g);microwave power 500 W;extraction time 7 min;extraction temperature 51 ?;selenol yield 1.771 mg/g;observation of Physalis alkekengi seed cells by SEM and TEM showed:Cell structure,the cell wall is almost completely broken,accelerating the acidity of the sterol dissolution rate.The optimum conditions were as follows:concentration of 0.3 mg/mL,adsorption time of 2 h,adsorption temperature of 30 ?,elution of petroleum ether:ethyl acetate 10:1(V:V);silica gel column chromatography;The results showed that the main components of the Physalis alkekengi seed oil were 6.55%of palmitic acid(palmitic acid),78.46%of linoleic acid,11.32%of oleic acid,octadecanoic acid(octadecanoic acid)Stearic acid was the highest,and the content of linoleic acid was the highest.The results showed that the content of linoleic acid was the highest,and the results were consistent with the phytosterol standard.The GC-MS method was used to analyze the Physalis alkekengi phytosterol The results showed that the main components in the Physalis alkekengi phytosterol were:209.92mg/kg of glycerol,331.48 mg/kg of stigmasterol,952.25 mg/kg of ?-sitosterol,56.74 mg/kg of pineapple,Kg of four sterols,the total sterol content of 1550.4 mg/kg.The results showed that the bacteriostatic effect of Physalis alkekengi phytosterol on common bacteria and mold in food was the effect of bacteriostatin on Escherichia coli,Penicillium and Aspergillus niger,and the inhibitory effect on Penicillium was better.Concentration(MIC)was 4.5 mg/mL.The results showed that the serum total cholesterol,triglyceride,arteriosclerosis index 5.35 ± 0.04,1.26 ± 1 in the mice fed with high fat diet for 30 days,0.15,1.232 ± 0.237,the serum total cholesterol,triglyceride,arteriosclerosis index was 6.26 ± 0.14,1.40 ± 0.16 and 1.446 ± 0.535,respectively,compared with the hyperlipidemia model group,which indicated that the Physalis alkekengi phytosterol had hypolipidemic effect.The purified Physalis alkekengi phytosterol extracted from the above experiment was added to the Physalis alkekengi freeze dried fruit powder,and the Physalis alkekengi phytosterol effervescent tablets were developed by acid-base granulation.Orthogonal experiment method was used to obtain the optimum technological formula:the proportion of Physalis and Physalis alkekengi powder 3:1,freeze dried powder adding quantity 20%,aspartame 0.12%,citric acid 0.32%,sodium bicarbonate 0.20%,lubricant(PEG6000)4%,Physalis alkekengi phytosterol 40%,maltodextrin added to 100%.The amount of foaming Physalis alkekengi effervescent tablets was 11.95 mL,pH 5,the disintegration time was 3.85 min,the sensory evaluation 96.3.
