| With the development of economy and the progress of the society,food requirement around the concept of nutrition safety and green health has been gradually growing up.Blend oil as the new type of edible oil can not only meet the demand of human to essential fatty acids,but also meet the needs of special people.Parturient undergo the special period in the life and is different from ordinary people about the demand for the type and content of the fatty acids.Thus,the parturients should pay attention to how many fatty acids ought to take.In this study,the fatty acid ratio and blend factors of corn oil and linseed oil were optimized by establishing mathematical model and orthogonal experimental design.And the optimal ratio of raw materials and process of parturient corn blend oil can be determined.Subsequently,the ability of antioxidant of various additive is evaluated by DPPH free radical clearance,hydroxyl radical clearance,reducing power,ABTS·+ free radical clearance and oxygen radical absorbance capacity(ORAC).Eventually,the effects of temperature,beam,antioxidant on the stability of corn blend oil suitable for parturient can be investigated by examining iodine value,peroxide value,anisidine value,carbonyl value and total oxidation value.And the basic formula of parturient corn blend oil can be determined.Finally,the physicochemical index of the product are determined,and the shelf life are predicted.(1)The highest content of fatty acid of corn oil and linseed oil are linoleic acid(49.81±0.98g/100g)and linolenic acid(49.72±1.89g/100g)inspecting by GC-MS respectively.It concludes corn oil(80.13%),linseed oil(19.87%)and there are five kinds of different fatty acids in parturient corn blend oil by establishing the mathematical model.The five kinds of fatty acids are palmitic acid(3.24±0.06g/100g),oleic acid(21.03±0.36g/100g),linoleic acid(41.52±0.31g/100g),linolenic acid(9.93±0.19g/100g)and arachidic acid(0.79±0.02g/100g).The optimal process of parturient corn blend oil can be obtained by the results of single factor and orthogonal test.The optimal process is 20 min,30℃,75r/min.The iodine value is 110.84±1.64g/100 g and the peroxide value is 1.876±0.037mmol/kg with above conditions.(2)Comparing antioxidant activity of seven kinds of different additive,including Lutein Esters,coenzyme q10,Ve,zeaxanthin,oxystearin,DLTP and TBHQ.It takesfive kinds of methods to evaluate,including DPPH free radical clearance,hydroxyl radical clearance,reducing power,ABTS·+ free radical clearance and oxygen radical absorbance capacity(ORAC).Eventually,the best antioxidant addictives are TBHQ,Ve and DLTP.(3)The storage conditions of parturient corn blend oil are low temperature,in brown bottle,keeping in dark place.The eight kinds of physicochemical index are investigated,including acid value,peroxide value,plumbum,total arsenic,affatoxin B1,benzo α-pyrene,residual solvent and free gossypol.The result shows that they all meet the national standards.The concentration of antioxidant compounds are TBHQ(0.015%)and Ve(0.005%).Ascorbyl Palmitate as synergist is 0.02%.The shelf life of parturient corn blend oil increases from 96 days to 384 days. |
