Alcohol is one of the most common toxic to the liver,and liver damage caused by excessive drinking has truly become a worldwide medical problem.In order to develop a new kind of health drink,the compound solution of traditional Chinese medicine Pueraria Flos and papaya as the object,the effect against the alcoholic liver injury in mice and individuals with alcohol intake was studied.In this paper,the multiple factors influencing the soft drink’s flavor and sense was optimized by single factor and the orthogonal experiment.The results showed as follows:1.The results showed that,compared with the control group,the effect against the alcoholic liver injury of the group 3 with compound liquid was most obvious.the drunk rate of mice decreased by 80%,drunk time shortened 46%,average drop rate of blood alcohol concentration was 83.5%,alcohol dehydrogenase activity increased 474%,liver damage degree decreased 60%.The experiments verified that there was synergistic effect on relieving alcohol and protecting liver of the combination of Flos and papaya and the optimized ratio of flos and papaya with best effect is 2:1.2.Determination of drinking staff experiment showed that,there wasdifferent degradation effect against alcohol of different concentrations of drinks,and the effect increased with the concentration of soft drinks.When drinking 39 degree liquor 100 ml a scalar and the concentration tends to 15%,the data showed the largest degradation and the best hangover effect,in contrast,there is no obvious difference as greater than15%.3.The order of factors affecting the sensory effect of the beverage of Pueraria and papaya was complex solution,sour agent,colorant,fragrance and sweetener;the highest blending combination of sensory evaluation indices for beverages is: 10% kudzu flower,5 papaya,12 honey,0.025 citric acid,0.02 lemon yellow,0.2 ethyl malt phenol.The effect of adding various factors to the alcoholic beverage was not significant,but,after a normal person drinking 100 m 39 liquor and then drinking 170 ml soft drinks,it may be played a better role in protecting the liver.In summary,against the alcoholic liver injury,there was synergistic synergism on the compound solution of Pueraria Flos and papaya.And the optimized ratio of Flos and papaya of 2:1.When the 39-degree liquor100 ml as a scalar,the best concentration of the beverage is 15%,therefor the best formula technology of the health drink was obtained.This study could provide reference for the production and development of relieving alcohol healthy drink.
