Pollen as a very comprehensive health care products,attracting more and more people to pay attention.Rape bee pollen is currently common on the market b,has a high nutritional value.However,due to the presence of pollen walls,pollen nutrients can not be fully utilized.At present,there are many ways to break the pollen,which is more suitable for rape bee pollen,which method is low cost,broken wall rate is high,nutrient loss is small,also need to continue to carry out more experimental verification.In this paper,the market potential,microstructure and structure of pollen are summarized.This paper investigates and evaluates the current research methods that is potential and novel,and proposes a new method of breaking pollen wall by the alkali.The broken wall rate as the evaluation index,to the production cost,the degree of nutritional loss as an auxiliary evaluation index.The pretreatment process was studied before the alkali treatment.The results showed a better broken wall treatment should be with the conditions that the pretreatment temperature:25℃,stirring mode:intermittent mixing,solid-liquid ratio:1:50,soaking time of 6h.At the same time,this paper compares with the pollen nutrient before and after the alkali treatment,the protein,flavonoids and reducing sugar content were used as evaluation indexes to study the effect of this alkali treatment method on rape bee pollen.It is found that when the breaking rate was 75%,the content of protein in pollen solid was 36.24%,the content of flavonoids in the separation solution was up to 2.95%,and the content of reducing sugar could reach to 23.13%.
