Citrus reticulata has many merits,such as have thin skin and easy to peel off skin,taste is fresh and delicious,convenient to eat,so people like to eat it,and it account for a large proportion in the market.However,the orange is very easy to get bad in normal temperature,how to effectively keep the quality of Citrus reticulate is the research hot.This research is on the base of study about suitable low temperature act on the quality of Citrus reticulate,adopt a new,green antibacterial fresh-keeping reagent-PHMG to treat on Citrus reticulate,then by studying its antibacterial properties,and its influence on the quality indexes of orange,aims to search a more effective method to storage and fresh-keeping Citrus reticulate to provide the theoretical bases.The results are as follows:1.By analyze the various indicators:4℃,the indicators that reflect the quality such as,the permeability of cell membrane was increased,ethyl alcohol,MDA accumulation were higher, in 4 ℃,SOD,POD,CAT activity were lower than 7℃.Under the condition of 10℃,the number of good oranges was less,weightlessness rate was higher.soluble solids was less than 7℃.By the significant analysis,7℃ storage temperature was relatively more suitable for Citrus reticulata storage.2.PHMG has a significant inhibiting effect on penicillium.In a certain concentration range, the higher concentration,the inhibitory effect on penicillium was the more obvious,when the concentration was 15mg/mL,the Bacteriostasic circle diameter was 34.22mm,the minimum bacteriostasic concentration of PHMG was 1.25mg/mL.In the Alkaline conditions,PHMG has a better Bacteriostasic effect.In the room temperature,by means of inoculating penicillium on the Citrus reticulate,when the concentration was 14mg/mL,it was no mildew In tenth day.3.In the temperature of 7℃,humidity of 85%,through Single-factor experiment,the optimum concentration was 8mg/mL,pH was7.5,the immersion time was 3min,via the response surface method,the optimum concentration was 8.93mg/mL,pH was 7.36,the Immersion time was 2.41min.Through the verification experiment,learned that the optimum concentration was 8.93mg/mL,pH was 7.36,the Immersion time was 2.41min.
