Sweet peppers are both fruits and vegetables.They are sensitive to carbon dioxide but also have certain tolerance to it as well.The purpose of this experiment is to study the tolerant characteristics of bell pepper that is under high CO2 concentration and apply it to the retail packaging and low temperature storage of bell pepper.This study is mainly divided into three parts:small packaging test at room temperature,small packaging test at low temperature and large packaging test at low temperature of sweet peppers.We studied the impacts of different packing ways on the sensual,gas,VC,chlorophyll,soluble solids of quality indexes and malondialdehyde,conductivity,free radicals and physiological and peroxidase of biochemical indexes of peppers.The main results are as follows:(1)During the storage period of 13 days,bell peppers at room temperature with PE film packaging showed up good fresh-keeping effects.Especially the peppers with PE30 packaging could better retain nutrients,and did no big damage to its internal structure.What’s more,they could keep greenness better in sensory evaluation and satisfy the requirement of retail shelves of sweet peppers.Therefore,it provides a way for the retail packaging of bell peppers.(2)The test results of small packages of sweet peppers at low temperature(10℃)showed that the temperature is an important factor affecting bell pepper storage period and bell peppers can be stored without any quality problems for 40 days at low temperature.If the storage time is 30 days or so,PE30 packaging is still the best choice.(3)The test of big packages of sweet peppers at low temperature showed that it is very necessary for bell peppers to open the packages at regular intervals in the process of storage and the opening time is quite important.For this study,opening packages in the twentieth day could not only reduce the respiration of sweet peppers,but also avoid irreversible gas harm to bell peppers under high concentration of carbon dioxide and improve the rate of good fruit of bell peppers.In addition,this study also has a certain guiding significance for the storage of other kinds of fruits and vegetables that are sensitive to carbon dioxide.
