| Daokou roast chicken is one of the typical representative of traditional sauce halogen,neat products in China,and be famous for its beautiful shape,brilliant color,spicy taste,delicious mellow and cooked lousy.It is popular with consumers,the keys in its unique flavor and beautiful shape.Nowadays,there are some factors restrict its development,the current problems to be solved is how to prolong its shelf life without changing the original flavor of the chicken crossirtg basis.The research of this study is Daokou roast chicken,and we did a field survey in the factory at first.The Daokou roast chicken with modified atmosphere packaging was examined microorganism,chemical and sensory evaluation in different storage temperatures and gas proportion,used predictive microbiology to optimize results,selected the Gompertz model and Haung model to fit growth data.The results showed that:(1)By cotton swab to the factory showed the production environment hygiene was poor,products were vulnerable issubjected secondary pollution in cooling and packing process to reduce the shelf-life.Suggested set up independent cooling workshop,the transformation cooling mesa and keep it clean.Strengthen hygiene management:proprietary waste(blood foam floating oil,etc.)set drainage facilities and keep the floor clean.Fan equipment should be clear in time and make sure all the apparatus disinfection.Raw and cooked meat should be placed separately to avoid cross contamination.Improve packing process,add plastic wrap or parchment paper to avoid cross contamination during transport.Packing process should pay more attention to the operating personnel hands and utensils clean.Set proprietaly finished-parts storage and keep the environment clean and tidy.(2)By comprehensive evaluating the quality indicators of different storage temperatures modified atmosphere Daokou roast chicken,the result showed the initial contamination was an important factor affecting the shelf life of MAP Daokou roast chicken,the lower the initial contamination,the longer shelf life is.Recommend roast chicken initial pollution control under 2.0 log(cflu/g).(3)By comprehensive evaluating the quality indicators of different gas system modified atmosphere Daokou roast chicken,the changes of total viable counts,lactic acid bacteria,TVBN and electronic nose were different.The difference was significant between the different storage temperatures.By the correlation analysis of all the indicators that influence the shelf life of MAP Daokou roast chicken,the microbial indicators was the main indicators of freshness.(4)The nonlinear regression procedure of SAS 9.1 statistical soft ware was used to fit the experimental data of total bacterial count and lactic acid bacteria with Gompertz models and Haung model at different Gas ratios and storage temperatures.According to the analysis of the relationship between gas ratio and lag phase,the result showed that the role of the MAP was not very obvious in the high temperature.In this case the lag phase was very short and the growth rate was very fast.However in the low temperature conditions under modified atmosphere packaging,the preservation effect is obvious.It could extend the shelf life of the chilled pork combine the low temperature with modified atmosphere packaging.In combination with the practical situation of the factory,it is suggested that the temperature of MAP Daokou roast chicken should not be higher than 15 ℃,recommend products and cryogenic cold chain sales to improve product quality.According to the analysis of the relationship between gas ratio and lag phase,the result showed it can effectively lower the growth rate of the total viable counts,effectively extending the lag phase of lactic acid bacteria.But it would cause the collapse and affect the appearance of the packaging when the CO2 gas ratio was too large.Integrated optimization of integrated optimization the result showed that when the gas ratio was 45%CO2+55%N2 could inhibit microbial growth and maintain the product appearance to extending the shelf life of the MAP Daokou roast chicken. |
