The acidity of wine is mainly determined by organic acid. The type of organic acid, concentration and type of wine, the quality of the quality of a great relationship, adjust the balance of acid and alkali, the impact of wine taste, color and biological stability. The organic acids in wine mainly include theof the acid, malic acid, citric acid, acid, lactic acid, acetic acid.Because of the important properties of organic acids in wine, the establishment of efficient and accurate detection method of organic acids can provide technical support and quality control data for wine brewing. Through organic carboxylic acid carboxylate (lactic acid and acetic acid) and binary carboxylic acid (succinic acid, malic acid, tartaric acid, fumaric acid) method for the separation of research, Chromatographic conditions of 7 main organic acids in wine by ion chromatography were established,and the method of the establishment of the chromatographic separation method was studied.The separation conditions are as follows:using ICS3000 ion chromatography, AS11-HC IonPac column,15% methanol+sodium hydroxide as mobile phase, set the flow rate is 1.4mL/min, the gradient elution condition is 0?15min, 1mmoL/L,15?33min, 1?30mmoL/L,33?43min,30?40mmoL/L,1mmoL/L,43?50min.Methods to confirm the results:Sample tests can be carried out directly by the simple sample pretreatment, which is diluted by 100 times and then through 0.25 ?m, and the recovery rate can reach more than 95%, the separation method has the advantages of high precision and low sensitivity, wide linear range, etc.
