In this paper,the method of self oxidation of benzene three phenol were used to study superoxide dismutase?SOD?activity characteristics of different lactation period from Laoshan goat milk.We discussed the effects of different processing conditions of temperature,pH,speed,calcium ion and fermentation time on superoxide dismutase activity changes of goat milk.The optimum processing parameters that can be applied to the development of high superoxide dismutase activity of goat milk products and the result was applied to the practical application in the product.We developed two kinds of milk products with high SOD activity.The results are as follows:?1?The SOD activity of dairy goat milk was significant different due to the individual differences among goats and different lactation.Moreover,the activity of SOD in goat colostrum was higher than that in mature milk.The change of SOD activity in goat colostrum was increased first then decreased,and the maximum activity of SOD was 126.31 U/m L at the third milking day.The variation tendency of SOD activity in mature milk was firstly decreased and then increased,and The higher the activity of SOD,the closer late lactation milk.?2?The SOD had strong resistance to endure high temperature,the SOD activity was 98.54 U/mL and 39.04 U/m L when heated up to 65 ? for 30 min and 100 ? for 30 min,and the activity of SOD became lower and lower with temperature increasing.The SDO was a kind of protease which was affected by p H.The SOD had the highest activity at pH6.5,and which was reduced when less than or higher than 6.5,but the change of SOD activity under the alkaline conditions was less than that of under the acid condition.The SOD was sensitive to the shearing force which was produced by rotational speed.The activity of SOD was 105.12 U/m L when the rotational speed was 2000 r/min,and the SOD activity was 67.04 U/m L when the rotational speed was 6000 r/min.The activity of SOD decreased with an increasing rotational speed.The SOD activity increased with the increase of calcium ion content which in the range of 0.2 g/L-0.6 g/L.Fermented milk was one of the most common types of dairy products,the SOD activity of fermented milk was increased first then decreased with the prolonging fermentation time.?3?Firstly,a kind of fruit and vegetable juice of goat milk which contains high SOD and can clear body detoxification and its preparation method.In this product,Laoshan dairy goat milk was used as main material,at the same time,SOD were added to this product.Luckily,this product contained rich nutrition and could clear body detoxification and had the best stability.The activity of SOD was very high in the three contrast experiments,respectively was 569.13 U/mL,542.89 U/mL and 533.75 U/m L.This experiment was optimized by the response surface method on basis of single factor such as chlorophyll content,pear juice content,cucumber juice.The result showed that the content of chlorophyll content was 0.35%,the content of pear juice content was 13% and the content of cucumber juice content was 5.5%.Meanwhile,the theoretic score was up to 91.5 while the experimental score was 91.Secondly,a kind of goat milk whey powder which can improve immunity and delay senescence.This product contained collagen,Fish protein,lucid ganoderma,SOD,dairy goat milk and whey.The SOD activity was 278.2 U/mL,289.33 U/mL and 276.56 U/mL in the three contrast experiments.This experiment was optimized by the orthogonal experimental design method on basis of single factor such as collagen content,fish content and maltodextrin content.The result of range analysis and that of the anova was the same to fish content>collagen content>maltodextrin content,and the optima plan was A2B1C2.
