First the microencapsules were prepared by complex coacervation, with chitosan/sodium tri-polyphosphate as wall material, lemon essential oil as core material. This experiment mainly from the seven factors such as HLB value, emulsifier content, the ratios of core and wall, pH, cross-linking content, the addition quantity of SDS, and the amount of calcium salt used. The morphology, chemical structure The essential oil capsule structure, morphology, closed type and thermal stability were characterized with optical microscopy (OM), fourier transform infrared spectrometer (FT-IR), thermogravimetric analysis (TGA), scanning electron microscopy (SEM), UV spectrophotometer (UV). The results show that the optimum process conditions of preparation of essential oil microcapsule is as follows: chitosan concentration of 1%, the ratios of chitosan and sodium tri-polyphosphate is 2:1, twain-80/span - 80 compound emulsifier HLB value is 10, dosage of emulsifier is 5%, the ratio of core and wall is 3:1, reaction pH value 4, for the amount of curing agent was 2%,0.5% for the amount of anionic surfactant, treatment with calcium salt was 20%. On microcapsule was prepared by structure and airtight performance tests, the experimental results show that: in microcapsules in ethanol production measured core material loss rate is 3%, this shows that the surface of the microcapsules density, good airtight type; Size 4 to 10 microns, the embedding rate of 47.68%.
