Dehydrated garlic slices is one of the most important garlic-processed products. It is crucial in exporting for foreign exchange, stabilizing national garlic price and securing the healthy development of garlic industry. China produced 300,000 tons of dehydrated garlic slices, among which 164,000 tons were exported. In current production process, every ton of dehydrated garlic slices will consume about 30-40 tons of water, and in the waste water,garlic polysaccharide, alliin, allicin, the main byproducts of this process, takes half the consumed fresh garlic. Discharging the waste water without processing will increase COD in the water, which will not only pollute the water, but also waste recyclable materials inside.In this passage, researches are taken to abstract allicin from garlic waste water with organic solvent extraction method. That helps settle down the optimized organic solvent system fitting the recycle of allicin, and improve the methods for testing allicin level in garlic waste water. And the effect of organic solvent system to the process of abstracting allicin during the dynamic absorbing process is also analysed.1. Select four organic solvent, they are Petroleum ether, n-hexane, N-butyl alcohol and soybean oil. Through experiments on the selection conditions: sample-to-liquid ratio,and interceptiontimes, Petroleum ether was found with the best interception result.2. In the pre-processing of garlic waste water, condition as increasing pH from 8.0 to8.5, and then Calcium chloride was added to depectose the garlic waste water, to the greatest extent avoiding the effects of impurities to the titration result during the late stage abstracting process of organic solvents.3. Through research on petroleum ether extract allicin of Wastewater Technology the effective Petroleum ether, the result of allicin was achieved when sample-to-liquid ratio was1:4, interception of times is 3, and liquid flow was 200 mL/s. Extract effect of allicin is the best with petroleum ether.
