Hericium is a large fungi, whose hymenium shows sphericity, and full of needle mycelium like hairs. It is well knowed by customers as its abundant nutritions, such as a variety of minerals and fatty acids,and functional properties. However, after 1?2d harvest, quality of Hericium become worse, which imediately loss flavor and turned into brown that economically detrimental.In this paper, Low temperature measure can effectively control browning was as an entry point, to study how different temperatures affect Hericium browning during storage. LC-ESI-MS and HPLC was used to analyse phenolic substance. Besides, how different temperature affect cytoderm and cytomembrane of Hericium, even reactive oxygen metabolism was taken into consideration to discuss the browning mechanism of Hericium. Findings are as follow:1.Low temperature can effectively inhibite browning of Hericium, but it is nothing with PPO activity. Hericium under nomal temperature have a significantly higher level of total phenols content than under low temperature.2.By principal component analysis, partial least squares analysis, and path analysis, it comes out that non-enzymatic browning is the main reason of Hericium during nomal temperature storage for the water-loss so that concentration appearance, however, enzymatic borwning is the main reason for browning during low pemperature. Levodopa is the dominating browning substance of Hericium known by LC-ESI-MS qualitative analysis.3.Low temperature can effectively keep cytoderm and cytomembrane well-organized. It shows that, Content of cellulose, lignin and pectin have lower levels during 1? storage than 15?. Cell membrane permeability and toxic effect of MDA is inhibiting under 1?.4.The another reason why low temperature can effectively inhibite browning of Hericium is the more active antioxidant metabolism function and well AsA-GSH cycle which make the content of H2O2 and O2- low.Simple put, the reasons why low temperature can effectively inhibite browning of Hericium have something to do with growth and metabolism. On nomal temperature, Hericium have a higher metabolism, respiration, and transpiration so that the much more serious water-loss cause the non-enzymatic browning.
