"Dairy" is defined as variety of products which are processed by fresh cattle (sheep) milk and its products. Dairy product is rich in vitamins, essential nutrients and other bioactive substances, and it is a very nutritious food.Dairy product is rich in nutritional value and good in taste, so it is amazing consumption around the world. The dairy industry started late and owned a low starting point in China. Along with raising the level of China’s economy and the health consciousness of people, China’s dairy industry has developed rapidly, and consumption of dairy products has been a significant growth in China. Important value of dairy products on human health is gradually being accepted and taken seriously by Chinese people.Base on this phenomenon of China’s dairy products, the author carries out a detailed investigation in aspects of dairy classification, nutritional value and development status of the dairy industry. Based in Shandong province, author describes the achievements of Shandong province dairy industry in aspects of production technology, enterprise scale, product variety and quality of products. The author also points out problems in the development process. Finally, the author proposes measures to promote the further development of the dairy industry in Shandong Province in terms of SMEs reorganization, the introduction of advanced technology by large-scale enterprises, relying on government support and strengthening development of new product.
