Franchise system is an important measure was pursued in the social and economic fields bythe Macao Portuguese authorities in the Late Qing Dynasty. Since pork was started of1848, andfinished of1905, which lasted57years, as the beginning of the franchise system, the evolution ofoperation system and regulation pork franchise system was deserved to make a thorough inquiry. Thecontribution rate of fiscal of pork franchise income, the epidemic prevention of pig disease, theguarantee of pork quality, and the rise abruptly of pork king, and so on, all the questions can not beignored. The performer of pork franchise system acted as the role of the agent, which governancedthe market of pork by the Macao Portuguese authorities, beard part of economic function of theauthorities, highlighted the political means of the transfer of contradictions and maintain the rule ofthe authorities.
